Cook

Position Summary

Prepare food items in accordance with production requirements and quality standards while maintaining a safe sanitary work environment.

ESSENTIAL DUTIES/RESPONSIBILITIES

Prepare food of consistent quality following recipe cards and production and portion standards, per dupe from servers.

Start food items that are prepared ahead of time, making sure not to prepare more than estimated needs.

Date all food containers and rotate as per the SOP, making sure that all perishables are kept at proper temperatures.

Check pars for shift use, determine necessary preparation, freezer pull and line set up. Note any out-of-stock items or possible shortages. Assist in keeping buffet stocked.

Return all food items not used on next shift to designed storage areas, being sure to cover/date all perishables.

Assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per SOP.

OTHER DUTIES/RESPONSIBILITIES

Assist in prep work of vegetables and condiments as required for the next shift.

No travel required.

JOB QUALIFICATIONS

Minimal hearing necessary to hear equipment, timers, etc.

Moderate vision required to check quality and portions of food.

Moderate comprehension and literacy required to read recipe cards and procedures.

High school education or equivalent experience.

Minimum one year food service or related work.

HiltonGarden Inn Atlanta Airport Millenium Centeris looking for a dynamic and seasoned Cook. The ideal candidate will possess 1-2 years of previous experience as a Cook. Hotel experience preferred.

Major Responsibilities
. Empowered to guarantee guest satisfaction, display hospitality and professionalism to our guests at all times, take pride in representing JHM Hotels professionally with our guests and assuring that all transactions with guests are handled in a legal and ethical manner.
. Understand and apply all hotel safety and security procedures to maintain a secure and safe environment for associates and guests at all times. In the event of an accident or emergency, get medical attention if necessary and contact GM or MOD immediately.
. Maintain a favorable working relationship with all company associates to foster and promote a positive working environment.
Essential Job Functions
. Prepare, cook and present a variety of hot and cold food items such as meats, fowl, fish, sauces, stocks, soups, seasonings, and other dishes as assigned in accordance with established standards for quality, taste and presentation and in response to specific guest requests.
. Create or assist in the creation of specialty dishes and menu items.
. Assist in all kitchen food production as assigned.
. Prepare and set up production line and ensure proper supplies of all food items represented inmenu. Supervise and manage the line and the line cooks during set up, production and break down of line, and expedite when needed.
. Comply with health department standards, upholding regulation at all times. Maintain a safe working environment, report and correct, if possible, any unsafe acts or conditions.
. Control food cost by adhering to proper methods of food preparation and handling. This includes the proper storage, rotation and labeling of food and the effective use of leftover food.
. Properly operate and maintain all kitchen equipment and maintain a clean work area and coolers.
. Adhere to health department and hotel sanitation and food handling guidelines.
. Comply with all recipes, portion controls and product specifications. Visually inspect, select and use only the freshest fruits, vegetables, meats and other food products.
. Maintain effective communication with Kitchen and food and beverage management, service staff, and be responsive to training and instruction, and attend meetings as scheduled.
. Train kitchen associates as requested/assigned.
. Prepare requisitions daily and comply with established storeroom and requisition procedures.
. Adhere to safety, security and sanitation procedures, report and, if possible, correct hazards.
. Understand all property safety standards and comply with these rules at all times.
. Work independently with little supervision.
