Banquet set up personnel work closely with and under the supervision of a Food and Beverage Supervisor or Manager. Set up personnel perform routine tasks to expedite service and keep the food and beverage operation on track.  A good set up person is imperative to the success of a busy food and beverage operation.

ESSENTIAL DUTIES AND RESPONSIBILITIES                                             

  • Prepares and breaks down a dining hall/room
  • Stocks and organizes equipment and tools
  • Maintains an adequate supply of inventory
  • Expedites seating to efficiently serve small to large groups of guests
  • Places table cloths and napkins, dish settings and utensils accordingly
  • Places table décor such as flowers, candles, programs, and other similar items
  • May communicate with guests to ensure satisfactory service
  • Conveys customer requests for other items to supervisor/manager in charge
  • Assist as needed in a variety of capacities as assigned
  • This job does not exercise supervisory responsibilities
  • Must follow all required safety and standard operating procedures
  • Must follow all company and hotel policies and procedures and standards of conduct

Work Environment and Physical Demands

The atmosphere varies between the fast-paced storage rooms and kitchens and the subdued quiet of the dining rooms. There is normally a pervasive sense of urgency in both areas. Many venues require set up personnel to wear identifiable company-provided uniforms. 

The work is often strenuous and tiring. Set up personnel will stand or walk for hours at a time. Some may be required to lift and carry heavy objects.  Injuries and illnesses are seldom serious in this occupation; hazards may include slips, falls, cuts, muscle strain to back injuries due to inappropriate lifting and bending.

Training

Most employees obtain their skills through short-term on-the-job training. Training generally starts with basic workplace safety regulations and continues with instructions on how to handle and deliver assistance.

Skills and Specialized Knowledge

Listening skills. Set up personnel must be able to understand specific orders and follow directions.

Manual dexterity. Because Set up personnel handle diverse objects such as tables and chairs, linen, trays, glassware, and do other tasks, they must have good hand and motion control.

Stamina. Set up personnel must be able to spend most of their work time on their feet.

Teamwork. The fast-paced environment can be hectic and stressful prior to an event. Set up personnel must be able to work well as part of a team to ensure that food is delivered properly, quickly, and efficiently.

To perform the job successfully an individual must be able to perform each essential function satisfactorily. The requirements listed are representative of the knowledge, skill, and/or ability required.

Education and Experience

High school diploma or GED preferred by not required

Work Schedule

Must be able to work a flexible schedule that includes days, nights, weekends and holidays

Report for work at required time and dates and maintain a responsible attendance record
