JOB PURPOSE:

Achieves guest satisfaction and attains maximum profitability of the unit by assisting the Food Production Manager in implementing and enforcing company standards in back of house and supervises kitchen personnel while on duty according to company policies, procedures, programs, and performance standards.

 

SCOPE:

Provide direction to the kitchen personnel on shift ensuring execution of all employee duties to guarantee maximum guest satisfaction and a quality work environment.

 

DUTIES:

• Supervises all kitchen personnel on shift, in absence of Food Production Manager.

• Ensures that, during shift, all menu items are prepared, portioned, and presented properly in a clean, safe, and sanitary manner according to standards.

• Ensures that during the shift the kitchen equipment is maintained in a clean, safe, and operational manner.

• Cooks and prepares menu items according to guest request within company standards and following food safety and sanitation procedures.

• Assists in scheduling, hiring, performance appraisals, employee work histories, and terminations of the hourly employees on shift by making recommendations to the Food Production Manager.

• Ensures the unit’s compliance to productivity and service standards with a sufficient number of well-trained and productive employees.

• Responsible for the security of all supplies in the unit’s storage rooms, freezers, and walk-in coolers, plus aids in monitoring food cost through proper waste and portion control.

• Anticipates, identifies and corrects system breakdowns to achieve maximum guest satisfaction.

• Communicates with Shift Supervisor—FOH, GSM, KM or GM and coworkers regarding product/service deficiencies, equipment, safety problems, etc

Requirements

PHYSICAL REQUIREMENTS:

* Extensive standing, without breaks

* Exposure to heat, steam, smoke, cold

* Reaching heights of approximately 6 feet and depths of 2 1/2 - 3 ft.

* Must have high level of mobility/flexibility in space provided

* Must be able to fit through openings-30” wide

* Must be able to work irregular hours under heavy pressure/stress during busy times

* Must have ability to come to work on short notice

* Bending, reaching, walking

* Using telephone

* Lifting up to 50 pounds

KNOWLEDGE AND SKILL REQUIRED:

Must have good communication and supervisory skills.

 

EXPERIENCE REQUIRED:

At least one year experience as a cook.
