The Mohegan Tribe of Indians of Connecticut has embarked on a business diversification strategy and one such area they are focusing on is the development of food and beverage restaurant franchises. They have entered into a multi-unit development agreement with AROOGAS , a rapidly growing and award winning Grille House & Sports Bar, to open 16 AROOGAS franchises in various counties in CT, MA, and all of RI. Thisagreement offers significant career growth potential for dedicated and motivated employees who want to be part of the Mohegan AROOGAS restaurant team. The position below represents a position in the first Mohegan owned AROOGAS franchise which is planned to open in UNCASVILLE, CT in February.
Summary of Position:
The incumbent in this position is responsible for completing all assigned prep work, setting up the
individual prep stations, while maintaining Arooga’s recipes, product presentations, product quality,
cook time standards and maintaining a clean and sanitary working environment.
Essential Duties:
1. Cleans and sanitizes the work area before, during and after the shift.
2. Practices sanitary and safe food handling at all times.
3. Prepares all food according to Arooga’s recipes, plate presentations and specifications.
4. Ensures that all pre-portioned food items follow Aroogas recipe portioning standards.
5. Monitors the cooling of all cooked food items, and updates them to the cooling chart.
6. Dates, labels and rotates all products.
7. Completes all assigned prep work within assigned time lines.
8. Works cook’s line during high-volume period, as directed by the manager.
9. Completes assigned daily and weekly cleaning projects.

Incumbent must be able to perform “essential duties” with or without reasonable accommodation. “Other duties” may be
reassigned as necessary.

Knowledge, Skills and Abilities:
• Ability to read and follow recipes in the manner in which they are written
• Oral and written communication skills
• Ability to use knives, slicing equipment and other food preparation equipment safely
• Ability to respond in emergency situations to avoid imminent dangers to self and others
• Demonstrated ability to prioritize tasks to maximize use of time
• Demonstrated ability to attention to detail
• Ability to be Serv Safe certified
Education, experience and Training:
• Six (6) months of prep cooking experience or culinary training
Physical Demands:
• Be able to reach, bend, stoop and frequently lift up to 50 pounds
• Be able to work in a standing position for long periods of time
Addition Requirements:
• Must be able to maintain a flexible work schedule including evenings, weekends and holidays
