As a General Manager, you are responsible for overall store operations including the application of policies and procedures, guest satisfaction and team performance, as well as ensuring all of Tom+Chee’s highest standards are met. As a General Manager you are expected to have mastered all areas of work at Tom+Chee, so that you may appropriately support crewmembers and assist in any area as business dictates.

Duties and Responsibilities include the following. Other duties may be assigned.

  • Proactively interacts with guests to ensure a positive dining experience for all guests through dining room oversight, food delivery and table touches.
  • Resolves guest concerns, problems or complaints in a timely manner.
  • Possesses and retains general food knowledge, as well as specific information, such as recipes.
  • Maintains knowledge of all kitchen stations’ requirements, including prep, building and grilling, and has the ability to fill in on any station as business dictates.
  • Monitors food production, prep area, and all other applicable areas and equipment to ensure food safety and quality standards are met and in compliance with local health department guidelines.
  • Assists with stocking and organization of the line to maintain adequate par levels throughout the shift.
  • Understands the appropriate thresholds for Labor and Food costs and help to ensure that the store is operating within appropriate staffing levels both daily and shift specific according to guidelines and protocol outlined by the Area Manager
  • Completes weekly inventory and places orders for items needed according to guidelines and protocol outlined by the Area Manager. If items are needed in the interim, purchases these items from a local source. Receives and stocks all food items in appropriate storage locations, ensuring food safety.
  • Builds and maintains excellent relationships with various vendors.
  • Has the ability to use the POS system quickly and correctly.
  • Follows proper cash handling policies and guidelines, ensuring individual and store over/short is in acceptable company standard.
  • Performs store openings and closings per company policies and procedures.
  • Completes any required checklists, paperwork or other administrative items in a timely and accurate manner.
  • Performs various store accounting functions, such as the coding and entering of invoices and the completion of the daily sales sheet.
  • Writes crew schedule according to business projections and reports payroll information to Human Resources in a timely manner.
  • Completes the daily communications log and communicates any issues to the Area Manager.
  • Provides weekly and monthly reports to the owners, as per established procedures.
  • Adheres to all restaurant policies and procedures, paying special attention to health and/or safety procedures.
  • Understands and discusses Tom+Chee catering options with guests, and may assist in booking the best option to fit their unique needs.
  • Recommends and oversees restaurant specials based on business trends.
  • Assists team in any areas needed to ensure smooth shift operation, including taking orders (in person or via phone) and washing dishes.
  • Performs and completes all other assigned tasks in a timely and accurate manner.

Supervisory Responsibilities:

  • Oversees crewmembers and managers, ensuring that all policies and procedures are followed.
  • Follows management guidelines for sound employee relations and safety of all crewmembers.
  • Utilizes performance management techniques, including coaching/counseling, verbal and written warnings as necessary to address issues as they occur.
  • For more serious incidents, consults with the Area Manager and/or Human Resources on appropriate disciplinary actions, to protect the company from liability.
  • Oversees training functions of the crew and ensures that all necessary food safety certifications for crew are current.
  • Delegates tasks as appropriate to ensure the smooth running of the restaurant.
  • Works to keep crewmembers motivated through effective communications, recognition and establishing and maintaining a positive atmosphere.
  • Plans and leads impactful crew meetings and weekly management meetings.
  • Provides crewmembers and managers with ongoing feedback and coordinates the formal appraisal process at the store level.

Education/Experience:
High school diploma or general education degree (GED) and a minimum of 7 years restaurant and 5 years prior management experience.

Language Ability:
Ability to speak effectively before groups of guests or crewmembers. Ability to read and interpret documents such as policy information, memos, checklists, safety rules, profit and loss statements, and procedure manuals. Ability to write routine reports and correspondence.

Math Ability:
Ability to calculate figures and amounts such as discounts, interest, proportions, and percentages. Ability to apply concepts of basic algebra to various business functions.

Reasoning Ability:
Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.

While performing the duties of this job, the crewmember will use and maintain the following equipment: oven, grill, stovetop, knives and utensils, dishwashing machine, slicer, blender, computer, fax, POS system and phone system.
