About this job

Under the supervision of the Assistant Director of Dietetics, the Supervising Cook I plans, organizes, supervises and assists in the preparation, cooking, and servicing of food for the inmate population. The Supervising Cook I instructs and supervises Cook Specialist II's in the maintenance of culinary equipment, supplies, and work areas, and instructs, leads, or supervises inmate worker.

Supervises various culinary areas, including:

Providing instruction and training in kitchen policies and procedures.

Supervises the maintenance of culinary utensils and equipment.

Provides instruction on the cleaning of various work and storage areas.

Provides supervision on appropriate procedures for garbage disposal as required.

Evaluates performance of Cook Specialists and inmate workers and recommends and/or implements the appropriate action for improvement.

Oversees Cook Specialist staff as they supervise inmate workers in the preparation and serving of food, the cleanup of the kitchen/dining room, and the transportation of food.
