The Omni Charlottesville Hotel offers 208 beautifully appointed guestrooms and suites featuring panoramic views of the Blue Ridge Mountains, along with a full service restaurant and 12,000 square feet of meeting space. The Omni is located in the heart of downtown at the base of the downtown pedestrian mall. Our location offers a wide variety of local restaurants, pubs, entertainment venues, or even just to take a scenic walk and enjoy the culture of Charlottesville. There are numerous local historic sites that have played a unique role in American history which include: Monticello, the University of Virginia, Ash Lawn-Highland, Historic Court Square and Michie Tavern. Job Description:
Provide high quality standards and procedures in preparing/serving all banquet food.
Responsibilities:
Coordinate all food orders between kitchen and banquet servers. Assist in directing and correcting the presentation and portioning of food for all banquet functions. Adhere to policies and procedures regarding sanitation and sanitary food handling. Maintains the work area, including all counter tops, utensils,m equipment, and refrigeration in a clean and sanitary condition in accordance with state, county, and company health regulations and safety regulations. Have thorough knowledge of menus and the preparation required, according to hotel standards. Maintain cleanliness and organization of all storage areas. Prepare and display buffet food items according to the hotel standards. Prepare food for Banquets, as required, following specifications on Banquet Event Orders. Know the location and operation of all fire extinguishing equipment. Practice safe work habits at all times to avoid possible injury to self or other employees. Be able to support any position in the Kitchen that is in need of help. Perform additional duties as the need arises.
Qualifications:
Proficiency in the following cooking techniques: charbroiling, poaching, deep-frying, saute, braising, roasting and par-cooking. Ability to recognize quality standards in fresh vegetables, fish, dairyand meat products. Knowledge of herbs and spices and proper use of each. Ability to maintain clean and sanitary environment with knowledge of proper food handling, storage and sanitation. Basic Knife skills required. Must have the ability to multi-task. Must have the ability to stand/walk for long periods of time. Flexible scheduling to include nights, weekends and holidays.
