Sodexo Universities Dining has an opportunity for an Executive Chef 2 to oversee the culinary program at Western State Colorado University.  Western State is located in beautiful Gunnison, CO – an ideal setting for outdoor enthusiasts and only 30 miles from Crested Butte! *RELOCATION ASSISTANCE IS AVAILABLE!*

 

This is a Sodexo “Reference Account” featuring our “Fresh 2” Resident Dining Program with multi-layered platforms in a 5-year old, premier University Center location serving approximately 700 mandatory meal-plan students and 200 on voluntary plans.  Additional venues include retail dining outlets as well as extensive catering both on and off-site.  Catering ranges from continental breakfasts to upscale, high-profile caterings for the President, Board of Trustees, Crested Butte Music Festival and weddings. 

 

Reporting to the General Manager, the ideal Executive Chef candidate will possess:

 

  • 3+ years of executive chef experience, preferably within a college/university setting.
  • Passion for innovative menu development and seasonal/local foods.
  • Previous upscale, large volume catering experience.
  • High expectations for customer service and quality of food.
  • Understanding of financials as they apply to cost controls of food and labor.
  • Ability and willingness to develop and train frontline employees.
  • Culinary degree (preferred).
  • Charisma to engage your team & this client as well as an ability to be innovative.

Position Summary

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.

 

Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree Basic Management Experience - 2 years Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.Sodexo will require a background check and may require a drug screen for this position.Sodexo is an EEO/AA/Minority/Female/Disability/Veteran employer
