Welcome to the kitchen of Franco’s Metro Restaurant, Bar & Pizza of Northern New Jersey. As you read this, one of our talented chefs is breading an order of fresh (never frozen) chicken breast. In moments chef will ladle on some of our tangy tomato sauce, followed by thinly sliced pieces of mozzarella cheese. Into the oven it goes, he knows it’s ready when the cheese begins to bubble, meanwhile Chef has some fresh broccoli blanching, it will be soon be sautéed with diced garlic and extra virgin olive oil to accompany his chicken dish (based on the customer’s request of course). Fire! Chicken Parmigiana with a side of Sautéed Broccoli for one lucky customer seated at booth #3. We do that to order a few hundred times a day, it just tastes better when it’s done fresh, on site and at the moment it’s ordered. We know that because over 40 years of food service experience tells us so. Across the kitchen one of our line cooks is shucking fresh littleneck clams and sprinkling them a garlicky mix of Italian breadcrumbs, they will be placed in the oven at about 450 degrees and in about 12 minutes the nice lady seated at our comfy bar who was just poured a crisp glass of Sauvignon Blanc by her favorite bartender will find outwhat fresh really means.
