Description:

A Gray Shirt is responsible for meeting all standards that have been set forth by Five Guys and VenQuest FGCA, LLC. This includes but is not limited to: cooking and serving perfect food, maintaining a perfectly clean store as measured by the Steritech and the Secret Shopper programs and providing customers with superior friendly, enthusiastic and efficient service. A Gray Shirt is responsible for tasking all restaurant responsibilities to their subordinates, as well as verifying that these tasks are completed. Gray Shirts are also responsible for all leadership tasks given to them by their superiors. Gray Shirt responsibilities are listed below.

Requirements/Responsibilities

Leadership Duties:

• Running efficient shifts which meet Five Guys and Secret Shopper Program expectations

• Managing shifts which meet all labor regulations and labor codes set by the state of California

• Maintaining the store to ensure that it meets all the requirements of the County Health Department, the Steritech program and the Secret Shopper Program.

• May be asked to perform store orders

• May be asked to perform minor store maintenance tasks

• Must be able to balance drawers, safe and count deposits

• May be asked to complete back of house paperwork

Morning Hours:

Ensures all morning prep and tasks are completed prior to store opening (11am)

Morning Tasks

Setting Up Lobby- The Gray Shirt is responsible for making sure restrooms and lobby floors are mopped, making sure restrooms are fully stocked and clean, assembling Coke and Tea machines, prepping lemons, cleaning all windows and frames, stocking peanuts, setting up floor mats and making sure the overall appearance of the store is perfectly clean and Steritech ready, as measured by the Secret Shopper program and the Steritech program.

Setting Up the Kitchen –The Gray Shirt is responsible to ensure that all Kitchen station, the chef base, the salad bar and the fry station, are fully set up and ready for use.

Safe Operations -The Gray Shirt is responsible for verifying the safe, the drawers and the deposit from the previous night. The Gray Shirt must take the deposit to the bank and take the drawers to the kitchen for use throughout the day.

Cleaning Tasks –The Gray Shirt is responsible for the completion of any cleaning tasks given to them by their superiors or any cleaning tasks that need to be completed in order to meet the requirements of the Secret Shopper program or the Steritech program. The Gray Shirt must do these tasks in a timely manner; giving their best effort to get the job done efficiently.

Morning Prep

Meat, Produce and Potatoes- The Gray Shirt is responsible for the completion of prepping meat and produce according to the Five Guys University video directions. The Gray Shirt is to do this in a timely manner; giving their best effort to get the job done efficiently.

Cooking Bacon- The Gray Shirt is responsible for the completion of cooking bacon according to the Five Guys University video directions. The Gray Shirt is to do this in a timely manner; giving their best effort to get the job done quickly and correctly.

Open Hours:

The Gray Shirt is to assign or be assigned to one or many of the following positions: Lobby, Point of Sales, Grill, Fries, Buns and/or Quality Control. It is the Gray Shirt's responsible to make sure all area of the store are operating each position according to the Five Guys University video directions. The Gray Shirt is to do this in a timely manner; giving their best effort to get the job done efficiently.

The Gray Shirt is also responsible for making sure that all stations are clean and well maintained at all times as measured by the Secret Shopper and Steritech Programs.

The Gray Shirt is responsible for giving great service to all customers at all times with a smile on their face, as well as making eye contact with any customer they may encounter as measured by the Secret Shopper program.

Cleaning Tasks –The Gray Shirt is responsible to make sure all cleaning tasks are completed. The Gray Shirt is to do this in a timely manner; giving their best effort to get the job done quickly and correctly.
