Position Summary:

This is an opportunity to lead the food and beverage operations for the largest resort style senior living community in Southern Oregon (see our community description below). The Director of Dining Services will oversee and organize activities of the Food & Beverage Department including, but not limited to the kitchen, banquet operations, restaurants, room service and bars. The Director of Dining Services will provide the leadership expertise and drive the continued development of all staff in a collaborative, efficient, and strategic manner. This is the top food and beverage job in our community and will ultimately oversee 200 employees in multiple food and beverage venues and kitchens facilities that cater to more than 1000 people, and a large number of guests. Direct subordinates include: the Culinary Director, the Executive Chef, the Director of Food Operations, and the Catering Director.  This position reports directly to the Executive Director. Specific job responsibilities and duties may include but are not limited to the following:

  • Supervises all Dining Services staff including scheduling, direction, performance reviews, hiring and corrective action consistent with company policies.
  • Meets regularly with residents, family members, and the Dining Services Committee to confirm that high customer satisfaction levels are maintained. 
  • Works with the Executive Director and front-line staff to obtain and maintain department customer satisfaction at or above designated scores in the “Quality of life” survey.
  • Ensures that all food prep, storage, and service areas are in line with company standards and with state and/or local health code requirements.
  • Full P&L responsibility -  understand and maintain monthly and annual budgets for the Dining Services department including producing written documentation of monthly spend on food, supplies, and labor.
  • Works closely with the dining venue managers and supervisors to provide a clear understanding of how to provide high levels of customer service and how to create a restaurant style dining atmosphere.
  • Assists back and front of the house operations as needed. This includes the ability to work all stations in the kitchen and/or dining room if needed.
  • Works with the staff and residents in the planning and development of recipes and menus.
  • Ensures that all staff uses and maintains equipment properly to avoid damage and costly repairs.
  • Maintains the appropriate inventory of kitchen supplies, small wares and table ware.
  • Responsible for ensuring that purchasing standards are maintained and that GPO approved vendors are used at all times. Maintain strong and positive relationships with all vendors.
  • Responsible for planning, preparation and execution of special events, banquets, and themed meals.
  • Stays up-to-date with industry trends and evaluates how to incorporate them into our product offering.

Job Requirements:

  • Minimum of 5 years as a Director of Dining Services or Food and Beverage Director in a large resort, hotel or Senior Living Community (CCRC preferred).
  • 10 or more years in the food and beverage and hospitality industry.
  • Full service multi-venue food and beverage management experience.
  • Proven experience in leading and developing staff.
  • Culinary or Hospitality Management Degree preferred.
  • Strong organization and time management skills.
  • Must have outstanding people skills
  • Food handlers permit as required by state law.
  • Advanced knowledge of dietary needs is desirable.
  • Must have a working knowledge of Windows XP or newer, Work, Excel, POS, and Outlook
  • High level of energy and is passionate about F&B and has the ability to inspire individuals and teams to achieve superior results by thinking creatively outside the norm to provide unique guest experiences.
