TITLE: Butcher Block Clerk

BASIC PURPOSE AND FUNCTION:
Provides courteous, personalized service 1o customers through the preparation of seafood products, prepared take out foods, and seafood salads and the sale of meat, and poultry products.
DUTIES AND RESPONSIBILITIES:
Maintains an atmosphere of enthusiastic customer awareness with an emphasis on fast, friendly, courteous customer service. Engages in suggestive selling and other sales techniques via In-store intercom and one-on-one customer contact.

Washes and processes fresh fish. Creates effective displays for meat, poultry and seafood pro• ducts. Weighs, wraps and prices butcher block products. Rotates and stocks meat, poultry and seafood products to ensure freshness, quality, selection and adequate supply to meet customer demand. Prevents the sale of out-dated or spoiled product.

Performs receiving duties including: organizing cooler and storage areas, refrigerating products immediately, verifying orders against invoices, verifying freshness of ordered product, reporting shortages and claims to ensure proper billing, dating and rotating products to ensure freshness and qualify.

Opens and sets up butcher block case and closes and pulls down butcher block case according to company procedures.

Ensures proper holding temperatures are maintained for fresh seafood and other butcher block products. Uses proper care In handling product to prolong freshness. Follows product presentation procedures such as icing and garnishing to ensure freshness, full variety and visual appeal. Follows proper signing procedures.

Maintains cleanliness, sanitation and appearance of butcher block cases, work area and
equipment. Maintains a safe work environment.

Prepares seafood salads and cheese balls. Cooks food samples. Steams fish products such as clams.

Responsible for performing all job duties and responsibilities with honesty and integrity.

SKILLS, PHYSICAL REQUIREMENTS AND WORKING CONDITIONS:

Ability to be friendly, courteous, tactful, and maintain composure in dealing with customers and co-workers. Must possess good oral communication skills and the ability to read and follow recipes.
Ability to frequently reach, lift, stack and maneuver objects of varying dimensions and weights up to approximately 55 lbs. Ability to push and pull fully loaded hand trucks and pallet jacks.

Ability to stand for long periods of time, walk and move rapidly, bend, stoop, twist and turn
frequently. Manual dexterity and good eye-hand coordination are necessary. Good balance is required to maintain traction on wet floors. Must be able to operate related equipment such as: knives, scales, steamers, broilers, hand trucks and pallet jacks.

Mental alertness is necessary to ensure safe and accurate completion of work activities. Requires knowledge of basic math, and weights and measures. Must be able to learn taste, content,
preparation and perishability of products, safety and sanitation procedures, receiving procedures, and department policies and procedures.

Exposure to potential hazards exists with respect to wet floors, cooking procedures, equipment and work aides necessary to perform job duties. Exposure to heat and steam while cooking
butcher block products and samples. Hands are in frequent contact with Ice, hot and cold water, and meat, fish and poultry products. Hands are frequently exposed to 30 degrees Fahrenheit while handl• ing products in display cases. Frequent exposure to 28 degrees Fahrenheit while handling pro­ ducts In cooler. Occasional exposure to -20 degrees Fahrenheit while handling products in freezer.
