Job Description
-Dietary Manager/Chef has oversight of a team of approximately 19 cooks and dietary aides. Reports to administration and will work directly with other departments of the facility (Nursing, Activities, Maintenance, Housekeeping, Laundry, Social Service and office).
Essential Functions:
-Responsible for all food production including special activities/events that are offered on the campus
-Manage/Update menu cycles (Winter, Summer and Fall), food purchase specifications and recipes
-Controls food and labor costs and maintains quality product within budget goals.
-Ability to evaluate talent, build effective and efficient staff, and motivate for success.
-Ability to interact with staff and other departments effectively.
-Must have strong written and oral communication skills with basic computer skills and working knowledge of various computer software programs (MS Office, Outlook)

The Dietary Manger/Chef is responsible for ensuring that all food is consistently outstanding throughout all dining areas. The Manger/Chef understands that quality and consistency in producing and delivering all aspects of meal service, regular texture, mechanical soft and pureed. Menus are liberalized to enhance intake and resident satisfaction.

Job Requirements
-Associates degree in culinary arts, hospitality or related fields preferred.
-American Culinary Federation (ACF) Certified Executive Chef (C.E.C.) Certification is preferred
-Taking the nutritional component of ANFP is required if not already obtained. Assistance to obtain this may be provided by the facilty.
-Association of Nutrition & Foodservice Professional (ANFP)
-A Certified Dietary Manager from ANFP
-Ability to identify and rectify problems swiftly and efficiently.
-Strong business and financial acumen.
-Ability to work with and direct a wide variety of personalities and encourage them to succeed
-Patient
-Hard working
-Able to set an example as a professional role-model
-Dedicated to providing exceptional quality food and service
-Thorough understanding of financial statements and budgeting process and how to use the budget for daily/monthly operations
