Sodexo is seeking an organized and detail oriented Food Production Manager 2 to help lead the culinary process at University of Mary Washington in Fredericksburg, VA . UMW has been an integral part of the community and a Sodexo partner for seventeen years. Sodexo's Resident Dining program serves approximately 3000 students. The Food Production Manager at this campus will be involved with, and responsible for the management of the daily operations of the kitchen, implementing production processes, providing oversight to catering events, properly managing food and labor costs. The best qualified candidate will possess excellent leadership and communication skills, a thorough working knowledge of HACCP, skills to develop and implement menus, ability to meet and exceed customer and client expectations, and the ability to handle multiple and often conflicting priorities. This position will oversee staff of 10 employees and will report directly to the Executive Chef so the ability to foster teamwork is imperative.
The ideal candidate will have:
Kitchen management experience in a high volume college/university, hospital, corporate business, or banquet/hotel environment; Strong "culinary chops" and ability to ensure high volume, high quality food production, presentation; Solid understanding of production systems (Food Mgt, Labor Mgt, The Market Connection) and a working knowledge and understanding of HAACP food and physical safety; The ability to provide strong kitchen management including hiring, training, and mentoring a talented and diverse kitchen staff. ** Relocation Assistance IS offered with this position! **

Plans, directs and coordinates the activities of food production employees. Responsible for the purchasing and receiving of food and supplies, as well as monitoring the inventory. Maintains food production records/cost indicators. Plans and costs menus.
Qualifications & Requirements
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 1 year
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
Sodexo will require a background check and may require a drug screen for this position.
