Duties and Responsibilities:

Under the general supervision of the Supervising Cook l (SCl), or the Director of Dietetics in the absence of the SCl, to prepare, cook, and dispense food for the residents and employees of a State institution, to care for culinary equipment, supplies, and work areas, to supervise, instruct, and work with other culinary employees and helpers from the resident population, and do other related work.

Prepare, cook, and dispense food for breakfast, lunch and dinner. Serve meals on the line for the main dining room as needed. Follow cook's work assignment schedule provide by the Supervising Cook l (SCl) or the Director of Dietetics. Cook a variety of foods, following standardized recipes and methods of preparation. Maintain batch cooking of all food items for daily meals for home residents, guest, volunteer and staff at Lancaster Veterans Home.

Portions food to be served in correct amounts per meal orders. Works in the Kitchen preparing soups, cereals, gravies, main entre's etc. Reads and follows posted menus paying special attention to requester's food preferences/diets.

Cleans and maintains culinary utensils, equipment and work areas. Follows daily cleaning schedule. Takes daily refrigerator and freezer temperatures. Reports repair and maintenance needs to the supervisor. Instructs and supervises other culinary workers in food preparation and report on progress to the supervisor. In the absence of the SCl and the Director of Dietetics, assumes responsibility of the supervisor. Acts as lead

Practice good personal hygiene. Follow departmental guidelines for the proper handling and storage of food supplies. Wear approved hair covering and apron. Follow dress code. Takes daily food samples of all food cooked or modified. Take & record daily food temperatures on all food that are cooked or prepared. Check food items for color, appearance, taste, texture, and temperature, to insure that food quality is of the highest standard. Report finding to supervisor. Participate in testing new recipes for menu adaptation. Prepare, cook, and modify regular food in consistency, salt and sugar content as required by residents.

Understand and practice good communication, good customer relations skills and maintain good relations with peers, home member, personnel from other areas and in all public contacts. Maintain an environment which protects the rights, dignity, confidentiality and physical/emotional wellbeing of the home members at all time. Attend group meetings as scheduled and receives instructions from the director of dietetics and the supervising cook l. Attend in-service training as related. Receive food items during absence of the SCl. Distribute cooking assignments in the absence of the SCl as needed.

Other related duties as required.

No lifting required over 50 lbs.
