Are you an experienced Executive Chef with a passion for high end catering that is searching for an exciting and challenging new position? Look no further!

Sodexo is seeking an experienced Executive Chef 1 for our campus food service operations at Freed Hardeman University located in Henderson, TN. Freed Hardeman is a small, liberal arts, faith-based University associated with The Church of Christ University, and is located about 15 miles from Jackson, TN, 90 miles from Memphis, TN and 150 miles from Nashville, TN. There are approximately 1200 students on the board plan, and Sodexo operation include a main dining hall with all-you-care-to-eat and three retail units comprised of Pizza Hut, Original Burger Company and a Starbucks we proudly brew opening in the new library January of 2016. Catering at the University is handled by Sodexo and is events from 2 - 3000 guests. Each December Freed Hardeman hosts a benefit dinner, supporting their student scholarships. They have hosted guest speakers from past presidents, Secretary of State and military leaders to this years Dr. Kent Brantly, US Medical Missionary and Ebola survivor. This evening each year Sodexo serves up to 3000 guests in 4 locations for a holiday dinner.

The Executive Chef will interact daily with an exceptional management team, including Catering Managers and Resident Dining Managers, to ensure that client expectations are being met and exceeded and to maintain food and labor cost controls. The Executive Chef will be responsible for various aspects of the daily culinary food and beverage operations on campus including, but not limited to, resident dining and catering.

Ideal candidate will have:

College/University high volume culinary experience;

Strong culinary background with some experience in catering and banquets;

Emphasis on food presentation, quality, execution, menu design & implementation;

Focus on customer service excellence;

Demonstrated experience providing strong leadership, including supervision, direction and training, to a diverse team of employees;

Focus on food and physical safety and sanitation;

Experience managing food and labor cost controls to meet targets;

High level of computer literacy and skill-set;

Strong understanding of financials and strong analytical thinking skills. ** Relocation assistance IS available for this position! **

Position Summary

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a small account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.

Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree

Basic Management Experience - 1 year

Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.

Sodexo will require a background check and may require a drug screen for this position.
