About this job

The Line Staff is primarily responsible for the first step of assembly in food preparation (aka hot line). The Line Staff must maintain clean and safe food preparation areas at all times. The job duties of a Line Staff include:

  • Starting food production when a customer order is placed and a ticket is printed, such as: warming tortillas, placing bed of quinoa in a bowl, placing proper portions of hot food on dishes, etc.
  • Reading tickets accurately and filling orders accurately
  • Ensuring every meal is made according to the proper portion sizes per the instructions for the line, regardless of whoever started the production of the meal
  • Rotating all foods properly on the line (“first in, first out” means freshest foods are placed behind other foods according to a reverse date order)
  • Avoiding any ‘mixed’ food in cold or hot wells on the line by keeping everyone’s work neat.
  • Noticing when items on the line are getting low and replenishing them long before running out.
  • Providing excellent customer service with all guests through smiles, greetings and kindness

Whenever there are few customers, the Line Staff may also be asked to:

  • Replenish food items on the cold line
  • Wash and sanitize dishes by properly using the dishwashing machine or correct manual dishwashing method in the 3 compartment sink when needed
  • Collect dirty dishes from the front customer area (in both customer bussing bins and tables) quickly and often to avoid pile up and ensure enough clean dishes are always available
  • Clean the space, such as mopping floors, scrubbing bathrooms, wiping down tables and customer areas, spray washing windows and mirrors, taking out the trash or recycling, etc.

The Line Staff may also be asked by the General Manager or Shift Supervisor to provide other forms of help for the line or for the space. The Line Staff must be ready and eager to learn any role or task assigned by the General Manager or Shift Supervisor.
