Sodexo Universities is seeking a driven and experienced Executive Chef 1 to oversee our culinary operations at Transylvania University located in the heart of Lexington, KY!  Are you passionate about food, wellness and nutrition and looking to bring a high level of expertise and leadership ability to create an outstanding experience for the people we serve?  Then this position may be the ideal role for you!  This position supports our mission by providing safe, wholesome and innovative food for our students and customers from the community.  Sodexo has managed the food service operations at Transylvania University for the last 40+ years!  

 

We are seeking innovative candidates with the following in their culinary "toolkits":

  • A strong artistic culinary flair - can you impress the President of a university?
  • Be a food-focused, with attention to taste, presentation, plating - flex culinary muscles!
  • Experience with food and labor management systems, on line ordering and inventory controls.
  • Commitment to providing stellar customer service - even at "peak rush" times, attention to detail, ability to delegate.
  • Flexibility and ability to deal with last minute changes in daily operations and catering, roll with the changes - find solutions.

The ideal candidate will have culinary management experience in a high volume environment, strong food production, planning management, and food cost management experience, computer literacy, full HACCP knowledge and ServSafe certification.

Position Summary

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a small account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.

 

Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree Basic Management Experience - 1 year Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.Sodexo is an EEO/AA/Minority/Female/Disability/Veteran employer.
