Assistant General Manager

Position Purpose: Responsible for assisting in operating the management of Armadillo Willy’s Barbecue restaurants.  To ensure high standards of restaurant systems, food quality, employee and management roles, guest interaction, store profitability and policy and procedures while demonstrating top leadership and communication skills.  Assist in being trained as a future restaurant General Manager. Able to take charge of the restaurant in the absence of the General Manager.

Responsibilities and Duties:

Dining area systems

  • FOH areas are organized and well maintained; all areas kept clean, safe and sanitary
  • Cash handling procedures are followed
  • Restroom maintenance

Kitchen systems

  • BOH areas are organized and well maintained; all areas kept clean, safe and sanitary
  • All equipment is in good working order
  • All recipes are followed - both preparation and production recipes
  • Food cost meets budget while ensuring recipe adherence

Food quality

  • Full menu knowledge
  • Able to make all menu items
  • Troubleshoot and act on food item problems
  • Acquire and maintain up to date food safety certification
  • Never serve, or allow to be served, sub-standard products
  • Communicate any product problems
  • Maintain food product specifications

Employee and management roles

  • Assist with recruitment, training and retaining of quality employees
  • In charge of developing and motivating the employees
  • Maintain proper emergency and security procedures
  • Fill in for line staff when necessary
  • Mediate conflict between employee and employee

Guest interaction

  • Exercises and promotes aggressive hospitality
  • Consistently delivers friendly, professional service
  • Takes the initiative to solve guest problems on the spot
  • Acknowledges regular guests              

Store profitability

  • Assist in meeting or exceeding store budgets
  • Analyze stores’ sales and labor costs daily
  • Assist in creating a local store-marketing program
  • Assist General Manager in development of quarterly budgets
  • Assist in reviewing P & Ls with general manager for opportunities for improvement

Policy and procedures

  • Follow all Armadillo Willy’s Barbecue policies and procedures
  • Ensure that all P & Ps are understood and followed by all employees
  • Hold employees accountable to P & Ps
  • Assure completeness of employment related paperwork
  • Assist in quarterly safety

Leadership

  • Work side by side with managers and employees to promote Armadillo Willy’s Barbecue standards of operations and philosophies
  • Set a good example; acts as a role model
  • Communicate in a direct, specific, non-punishing manner
  • Maintain mutual respect in all working relationships
  • Respect individual rights and treat all employees with courtesy and consideration
  • Possess a current CPR & First Aid certificate                      

Communication

  • Report to General Manager on store’s progress and opportunities
  • Contact Director of HR about any HR issues at the store level
  • Perform other duties as directed
