Do you love Sushi and are you highly skilled in this area?  Do you want to combine your passion for this amazing Japanese Cuisine with your desire to lead and teach others?  You may be a perfect candidate for our position as a Sushi team leader.  The role of the Sushi team leader is to ensure the development and education of the Sushi team at a low/medium volume department which will in turn assist with bottom line profitability of the sushi department and ensure that we are serving only the best products, while helping to drive our Who We Are values.

·          Partnering with the Executive Chef, Sous Chefs, Café Manager, Area Manager, Store Manager, and Employee Representative to identify talent and utilize appropriate tools to develop employees
  • Delegating tasks to team members and empowering them to take on new challenges, being certain to provide timely feedback and annual performance reviews that focus on their growth and professional development
·          Utilizing employee input to make changes to the department and recognizes employees for their contributions to the departments
·          Helping employees balance their home and work life-honoring scheduling requests when possible
·          Increasing team members product knowledge and setting an example by offering knowledge based service to our customers
Customers:
  • Educating customers and employees on products in the department, making sure to share knowledge to offer complete meal solutions, suggest ways to prepare meal items and work across departments to eliminate knowledge barriers and exceed expectations
·          Ensuring that department meets the customer’s need by maintaining the overall appearance of the department by bringing the guiding principles to life
·          Ensuring fresh product levels are sustained throughout the day and food is presented in eye-appealing ways to showcase quality to help drive sales
·          Providing customer with incredible customer service by sampling, educating and offering unique products to the customer
Product:
  • Ensuring products are prepared with a consistent, high quality outcome by following Wegmans core recipes & cooking techniques and educating team members on these practices
  • Maintaining the overall appearance of the department, ensuring products levels are sustained throughout the day and food is well-merchandised to showcase quality and increase sales
  • Ensuring all employees are properly handling products, using equipment and taking accurate logs in accordance with food safety and safety guidelines
  • Ordering products and controlling inventory to ensure only the freshest products are offered
Results:
  • Overseeing the entire operations of the Sushi department including ordering with Simplification practices in mind, hiring & staffing, training & development, scheduling and managing payroll
  • Possessing a complete understanding of the Sushi department and accurately forecasting department and customer needs when planning daily production lists and menus as well as scheduling employees
  • Communicating with Sous Chefs, Executive Chef and members of culinary team to set and achieve goals and development plans for both the department and the sushi team
What abilities I must bring to the table to be considered:
 
 
3 or more years making sushi and other types of Japanese cuisine
Knowledge of Japanese ingredients
Knowledge of HACCP laws and food safety regulations
Skill; knife usage and sharpening

·          Practice proper ordering techniques to complete orders by deadlines and participate in inventory process to ensure items are available to support merchandising programs and product promotions
·          Exhibit merchandising skills by attractively displaying products considering seasonality, cross-merchandising opportunities and corporate programs with the aim of educating and enticing customers
·          Assist with meal preparation and planning by providing customers with proper serving guidelines and recommending correct cooking techniques, helping to make great meals easy
What will set me apart from other candidates:
·          Managerial/supervisory experience
·          Associates or bachelor degree in Culinary Arts
·          Highly proficient with cutting and working with whole fish
·          Experience preparing all types of sushi and preparing ingredients at an expert level
·          Knowledge of Japanese food and culture
Work environment:
  • Continuous interaction with customers and co-workers in a fast-paced environment
  • Typical motions include repetitive hand and arm movements, bending, reaching and frequent lifting of an average of 5 – 20 pounds
  • Work requires the safe and proper handling of cooking utensils and kitchen equipment
  • May be exposed to various allergens and work environments,
  • Will be required to spend the majority of time on his or her feet and stand or walk without a break for up to 4 hours
