POSITION SUMMARY

The Assistant Kitchen Managers role is passionate about the taste and temperature of each dish and perfect plate presentation, demonstrates immaculate standards in the kitchen while maintaining an organized and “like new” restaurant. The Assistant Kitchen Manager is committed to safe food handling, cleanliness, safety, and sanitation standards during the shift and prepares food with proper safety equipment, tools and recipe specs with further direction from Management.

 

POSITION DETAILS

  • Maintain high employment quality standards consistent with the Express brand
  • Assist in set ups for the opening crew in the kitchen
  • Check schedule for in-coming Aces
  • Adhere and coach security procedures
  • Check out the close from night before
  • Review inventory daily
  • Prepare to receive orders
  • Keep track of shelf-life adherence
  • Check temps on freezer and refrigeration units before prepping
  • Knowledge of the flavor profile and specification of menu items
  • Follow recipe cards with no compromise
  • Review the daily sanitation checklist and conducts the checks
  • Conduct daily health inspections
  • Adhere to sanitation, temperature and food safety standards
  • Work the flow of the tickets to ensure good cook times

 MINIMUM REQUIREMENTS

  • Previous experience in the restaurant industry
  • Certified trainer in any heart-of-the-house functions
  • Must be willing to work a flexible schedule to include holidays, nights and weekends
  • Legal authorization to work in the United States
  • Minimum 21 years of age

 PREFERRED REQUIREMENTS

  • Held positions of leadership previously
  • Trained and proficient in all areas of the heart-of-the-house functions
