We are a chef-owned restaurant in Portland Oregon looking for someone who is enthusiastic about Italian/NW cuisine to take the helm of our successful restaurant as we enter into our 2nd decade of business. You love what you do and have an absolute passion for Italian Cuisine and making great food every time. You are a benevolent leader and are excited to train and cultivate cooks to their highest potential. You understand all aspects of the kitchen and are ready to work hard, set examples and lead our crew in keeping our standards as we move forward.Additional responsibilities:Changing and adjusting the menu to utilize local and seasonal ingredientsWriting, costing out and teaching new recipesWorking chef- filing in the holesAdministrative duties (inventory, health inspections, etc)Sourcing, purchasing and utilizing local and seasonal ingredientsMaintaining all food quality standards for the kitchenHiring, training and managing new kitchen staffCommunicating and working with all staff- including fohJob requirements:Understanding and knowledge of fresh Pasta makingUnderstanding and knowledge of Pizza doughAn understanding of various cooking techniques and stylesCharcuterie and smoker expertise highly desiredExcellent communication and leadership skillsGreat attitude and ability to work well with othersExperience with purchasing ,cost control and inventoryAbility to write a schedule and adjust accordingly based on business and labor costCleanliness is a mustA sense of humor
