Responsibilities

People / Development / Training

  • Hires, trains and develops personnel to deliver \"The Levy Difference\"
  • Promotes a cooperative work climate, maximizing productivity, morale, and professional development, building a strong bench at the location level
  • Proactively works with HR and Operations on potential personnel coverage gaps and succession planning
  • Aid in onboarding of new location purchasers or, for locations without a dedicated purchaser, personnel who will be taking on purchasing & warehousing duties
  • Train team on BOSS and any other relevant systems and processes, to ensure proper inventory management and financial reporting practices are adhered to
  • Provide assistance of year-end review of salary team members and key staff members
  • Act as dotted line report for location Purchasers
  • Serve as mentor for Keys to Future participants

Planning

  • In collaboration with Restaurant Culinary and Finance leadership, conducts location menu reviews before seasons and with any changes to ensure menus are costed-out properly, ingredients are sourced and to spec, yield analysis has been completed for all items and program needs are escalated to the Foodbuy team
  • Review and publish net cost impact of client required programs and aide client in making programing decisions
  • Finance, Culinary and Operations on location forecasts/budgets to deliver profit goals, helps locations identify and own margin enhancing opportunities
  • Communicate company-wide Purchasing initiatives and program adjustments
  • Conducts monthly menu reviews with culinary teams and creates action plans for \"at risk\" menus in terms of margin, supply, etc.
  • Evaluate opportunities to synchronize usages of items within location clusters
  • Provide opening and key event support

Buying

  • Establish check-in cadence with locations on spend reporting vs. forecasted sales vs. monthly budgets
  • Coordinates with locations in identifying the optimal vendor / spec combination and ordering cadence to meet location needs
  • Audit of location ordering and BOSS reporting
  • Establish programs of suppliers currently not listed as Model Market
  • Review and approve of all special order/stock request submissions
  • Oversee and manage stock levels of dedicated and high usage items with key purveyors
  • Ensure commodity items are purchased at optimal seasons - preventing locations from potential overspend and purchasing sub-par qualities
  • Warehouse & Inventory Management
  • Assist with purveyor delivery concern solve
  • Assist with development of warehousing teams and of labor budgets
  • Coordinate inventory schedule with Regional Operations team, review end of month results, and extension reports
  • Mobilize teams behind inventory anomalies to identify and address the root cause of issues
  • Establish inventory turn goals for all locations, track metric, and hold teams accountable
  • Establish drop size goals for all locations, track metric, and hold teams accountable
  • Monitor and offer assistance for implementation of slow and dead stock disposition
  • Yield analysis to be monitored of draft beer and fountain soda
  • Review bi-weekly flash reports to ensure review takes place

Payables / Finance

  • Review spend reports with key purveyors, making sure all invoices are closed out and paid in full
  • Set monthly targets for p-card spend, monitor p-card reports, and hold teams accountable
  • Ensure that all vendors are setup per Compass protocol as they relate to tax and insurance information
  • Communicate global pricing updates to location teams so that they can update in our menu builds and inventory systems
  • Review late invoice payment reports monthly and escalate issues with Operations leadership
  • Review monthly statement reconciliation with locations
  • Review month-end accrual log with each location
