La Brioche Patisserie is hiring a full-time Chef de Cuisine/Sous Chef. We are seeking a professional chef that can grow with our company. Experience required with cooking skills and managerial/decision-making, as well as team leadership. Must be able to make decisions about menu items and development, ingredients, food preparation, presentation, kitchen operations and personnel within the kitchen.

This is a fast-paced role that requires the chef to constantly balance providing a high level of customer satisfaction while keeping the kitchen moving efficiently. 

Primary Responsibilities: 

-Coordinate meal preparation at the MMA Cafe.

-Assign tasks to prep cooks and ensure that food is delivered on time.

-Oversee food quality by monitoring food that is served to clients- whether that is at the MMA Cafe, MMA Event, La Brioche Catering, or at Whisk. Ensure that meals are correctly cooked, portioned, and presented.

-Develop new menu items on a regular basis based on customer demand, seasonal ingredient availability, and special events. Collaborate with management team to develop creative dishes throughout the year. 

-Select and source ingredients for savory meals served at all outlets of La Brioche.

-Balance ingredient quality with costs and concerns for restaurant profitability. 

-Produce food cost calculations for all menu items developed. Share with management team to set pricing.

-Responsible for maintainings kitchen cleanliness and safety. Develop and/or enhance processes for food safety and storage as necessary.

-Prepare safety and cleanliness guidelines for kitchen staff and inspect employee's adherence to those guidelines. 

-Set up and manage schedule for culinary staff on a daily basis. Come up with the most effective way to utilize our staffing resources among all LB outlets. 

 

Experience:

-Ktichen management: minimum 2 years experience required.

-Kitchen: minimum 4 years required.
