POSITION DESCRIPTION

POSITION TITLE:

Prep

SUMMARY:
Maximize the guest experience by preparing all produce needed for cooking in the kitchen, service to the lines, and for the condiment table. Ensures that all line/sauce bar products are rotated so that the oldest product is used first. May be assigned to work multiple stations throughout the shift.
JOB DUTIES MAY INCLUDE:
  • Follows the Recipe Manual and Preparation Procedures to ensure that procedures are complete.
  • Follows the production chart to determine the amount of product needed to prepare for the day.
  • Prepares bulk quantities of cold prep items following menu and portioning guidelines.
  • Uses the correct equipment for the different prep stages of products.
  • Ensures workstation is clean and organized.
  • After completing the preparation process, washes, rinses, and sanitizes pots and pans. Washes dishes and utensils. Cleans and sanitizes prep counters and sinks, and sweeps and mops floors.
  • Cleans and maintains the organization of the back of the house and walk-in cooler.
  • Removes kitchen trash. Maintains organization and cleanliness of walk-in cooler.
  • Assists in receiving and putting away deliveries.
  • Practices all food safety guidelines as outlined in the Food Handlers Certification.
  • Completes all duties as assigned.
  • Works within all company policies, procedures and standards. Regular attendance.

    SAFETY PRACTICES:
  • Inspects all equipment to ensure that it is in good working condition.
  • Uses cut resistant gloves and non-skid shoes as required.

    PHYSICAL:
  • Occasional lifting of bags and boxes weighing up to 50 pounds. There is heavy cleaning involved. Prolonged periods of standing, walking, reaching, bending, stooping and stirring.

    REQUIREMENTS:
  • Must be 18 years or older (OSHA requirements). Bilingual skills in English and Spanish is preferred. High school diploma or GED equivalent desired. Minimum of 6 months experience in a food preparation position preferred.
