Who you are:
- High school graduate
- Advanced knowledge of practices and procedures in cooking and food preparation techniques, and sanitation skills
- Minimum of 5 years of production cooking experience, with at least 1 year in a lead or supervisory role required
- Previous experience in senior living community preferred
- Requires Servsafe Manager Certification
Job Summary
Under the direction of the Executive Chef and in their absence, the Sous Chef, the Sous Chef II will perform a variety of duties including but not limited to staff supervision, staff training, food preparation, cooking, safety, sanitation, cleanliness and ensuring compliance with Title 22, the health department, federal and state regulation and Casa de las Campanas quality standards in all kitchens and dining venues and will perform other duties as assigned.
Essential Job Duties:
- Coordinates and plans food preparation, cooking, and meal service
- Maintains accurate preparation and production records in accordance with Casa standards
- Cooks, prepares, presents, and serves both hot and cold food items. Can perform all duties of Entrée Cooks, Cooks, Salad Cooks, and Utility Workers if required. Tastes and smells prepared foods to determine quality and palatability
- Monitors and records temperatures of hot and cold foods throughout food preparation and service to ensure standards are met prior to steam table transfer and are maintained throughout meal service in all levels of care
- Maintains accurate equipment and food temperature logs in all kitchens and submits records to the supervisor
- Monitors and reports any safety, sanitation, or food handling concerns in assigned areas. Takes immediate corrective action when appropriate
- Communicates to Executive Chef and Sous Chef or Food and Beverage Director, regarding levels of supplies, safety deficiency concerns, and other dietary-related issues
- Conducts or assists with monthly inventory, as directed.
- Determines and prints daily specials menus for Bistro and Sur and makes appropriate menu substitutions - in the absence of Sous Chef and Executive Chef
- Maintains excellent relations with residents and close working relationships with dining services supervisors, employees, and other departments
Pay Rate:
Starting at $25.25/hr.
