Edible Beats is seeking Sous Chef candidates for consideration in a sous role at Root Down. We are looking for candidates that are interested in our group as a whole and would find fulfillment in any of our kitchens.

The Sous Chef role includes (but is not limited to) the following responsibilities:

  • Support the Chef de Cuisine or Executive Chef, along with the chef team, in the daily operations of the restaurant: oversee labor and food cost for back of house; maintain the established Edible Beats culture;
  • Assist or help oversee with inventory, ordering and receiving. Contact vendors about any product issues.
  • Check prep lists, orient prep staff, assist with chef production responsibilities: butchery, sous vide, specials, sauce work, etc.
  • Perform line tastes and final station checks for service
  • Attend line-ups and communicate any specials, issues, ice breakers, etc; lead as scheduled. Ensure staffing levels are appropriate and make necessary labor cuts throughout the shift.
  • Assist with flow and success of service. Run stations, expo, and sell food, as needed.
  • Maintain organization of walk-in and dry storage.
  • Assist in specials and amuse.
  • Record key information in shift notes
  • Operate as a new hire liaison; orientate the new hires to the kitchen and our culture.
  • Operate as an opening and/or closing chef; expo, and sometimes run stations as needed.
  • Assist or oversee sanitation standards.

This position is a full-time salary role that requires open availability including the ability to work closing pm shifts, brunch shifts, and weekends. Hours can vary, but candidates should be prepared to work 50 hours a week.

Desired Skills and Qualifications

  • 3+ years experience with kitchen management
  • Clean and efficient kitchen skills, strong abilities in every station plus expo
  • Excellent communication, ability to coach, train, and develop teamwork
  • Evolved style of employee relations and leadership
