        Job Title: Dishwasher
        Compensation Type: Hourly
        Direct Report: Executive Chef, and Sous Chefs

        Job Summary:
        Washes, stores, and stocks all plateware, glassware, silverware, food storage containers, cooking supplies and other small equipment; maintains dishwasher area and surrounding kitchen work areas in a sanitary, safe and efficient manner

        Essential Tasks and Responsibilities:
        •    Sets up and breaks down dishwasher; cleans and maintains dish machine equipment
        •    Operates conveyor type dishwashing machine; checks and adjusts water temperature and chemical levels during dishwashing operation to insure proper cleaning
        •    Organizes racks and feeds dirty dishes and utensils through dishwasher or sink as this equipment is returned from dining rooms and kitchen workstations; washes by hand pots, pans, trays and large food storage containers
        •    Carries, lifts and stores in proper places all dishes, pots and pans, trays, utensils, cups and other equipment for the department
        •    Empty, clean and refill dish machine with detergent and water when needed
        •    Cleans oven, exhaust hoods and other kitchen equipment machinery
        •    Empty, strain, clean and refill deep-fat fryers
        •    Remove, shake down, hose down and stack floor mats
        •    Sweeps, soaps, hose down, squeegee and mop entire kitchen floor
        •    Carries trash from the dish room and other kitchen areas and places in dumpster; cleans and sanitizes garbage cans and keep clean liners in cans at all times
        •    Other duties as assigned

        Additional Responsibilities:
        •    All dinnerware, kitchen supplies, utensils, accessories and equipment are properly cleaned, sanitized, stored and kept readily accessible so that food and table service to the customer goes without interruption
        •    Deep-fryers operate with clean oil and in sanitary condition so that deep-fried food is served timely and with an appealing appearance, smell and taste
        •    Kitchen equipment and work areas are maintained so that equipment is in good and safe working order to meet the pressure of high volume business
        •    Kitchen floor is clean and water-free providing a safe, sanitary and orderly work station

        Supervising
        This position does not have supervisory responsibilities

        Required Qualifications:
        •    Food service and/or restaurant experience desired but not essential
        •    Ability to understand and follow directions in English is desirable
        •    Able to follow and complete directions and assignments and to successfully respond to managerial supervision; to act quickly and decisively to requests in the face of high volume fast-paced business and unexpected problems and crises
        •    Able to work a variable schedule of hours and days to include early mornings, late nights, weekends and holidays as well as weekends

        Work Environment:
        •    Mostly back-of-house
        •    Inside kitchen area/dish room and includes interaction with heated equipment, steam, loud noises, chemical products, and other at-risk conditions

        Physical Requirements:
        While performing the primary duties of this job, the employee is regularly required to:
        •    Able to lift, carry, store and arrange stacks of dinnerware, racks of silverware, containers of pots and pans, food storage containers weighing up to fifty pounds frequently throughout an eight hour shift; able to carry trash cans weighing up to 200 pounds a distance of 25 to 50 yards and to lift and dump into dumpsters; to carry 5 gallons containers of hot oil 30 yards to oil barrel and dump; stand and walk for extended periods of time, to lift, reach, stoop, bend, climb and handle heavy loads; exhibit eye and hand coordination and handling dexterity for rapid and continuous cleaning an restocking of restaurant and kitchen supplies and equipment; to handle degreasing cleaner in a safe and fast manner; physical dexterity and agility to clean floors, under counters, shelves, walls and ceilings
        •    Hazards include but are not limited to cuts, burns, slipping, tripping, scrapes and strains; frequent exposure of hands to water chemicals and steam
