Job Description

Kitchen Managers reports directly to the Restaurant Manager and is a hands-on experience and production base manager.  The Kitchen Managers understands that guest satisfaction always takes priority, but efficient restaurant operations makes it possible. They are an experienced leader with an ambitious goal to move up in the management field.

Requirements

Essential Job Functions include, but not limited to:

  • Supports the entire operation, including Front-of-House and Back-of-House
  • Assists in the execution of the restaurant business plan as directed by the GM
  • Recruit, interview and hire a team that represents our core values. Coach all employees using Moctezuma’s values to establish culture and core standards. Complete successful training plans and development of a team of top performers. Execution of hourly employee schedules to meet staffing requirements for each day and as determine by the GM
  • Ensure the safety of our guest and team members through training, execution of food safety, restaurant safety standards and guidelines
  • Accurate, complete designated duties such as inventory control, ordering products. Lead some financial areas of the restaurant including sales growth, cost management, and profit growth
  • Successfully promote and publicize the Moctezuma’s brand
  • Cooks and prepares food following approved recipes and production standards. Ensures all deadlines are met based on production orders
  • Stores food in designated areas following all corporate, state and federal food safety and sanitation procedures
  • Ensures proper food handling, presentation, portion control and maintenance of appropriate serving temperatures
  • Maintains sanitation of equipment, supplies, and utensils. Cleans workstation thoroughly before leaving area. Keeps display equipment clean and free of debris during meal service to comply with all sanitation, safety, production and merchandising requirements
  • Monitors inventory and deliveries of product and supplies. Tracks product production, consumption and waste. Informs supervisor when supplies or product are low

 

 

Qualifications

  • Minimum of 2 to 3 years Food & Beverage / Hospitality experience
  • High school or GED required
  • Positive attitude with a generous and uplifting team approach  
  • Customer service focused and solution oriented
  • Energetic and professional approach to his /her craft
  • Must enjoy and be able to succeed in a fast-paced work environment
  • Ability to communicate clearly and professionally with customers and coworkers
  • Ability to develop positive working relationship with all restaurant personnel a
  • Must be able to perform in a high-volume restaurant
  • Must be able to stand for long periods of time
  • Ability to work a flexible schedule based on department and restaurant needs
  • Ability to execute great time management skills

  • Serve Safe Food and Alcohol Certification cards are required according to our local and or state regulations

 

 

Physical requirements

  • Ability to stand and walk continually throughout an eight-hour shift
  • Ability to lift, carry, deliver and serve from trays weighing up to 40 pounds throughout an eight-hour shift. Ability to lift to 50 lbs.
  • Ability to attend work as scheduled, working various schedules and shifts throughout normal business hours (some holidays and most weekends are required)
