This is an Interstate Hotels and Resorts Position.

Requires 3+ years experience as a chef or 5+ years as sous chef at a casual fine dining or fine dining establishment. Must be able to manage BOH standards, food and labor costs, have strong culinary skills and great communication skills. Have a great understanding of seasonality of produce and a strong passion for using local ingredient, quality food and service.

The Penn Square Grille Chef will train and manage kitchen personnel and supervise/coordinate all related culinary activities: estimate food consumption and requisition or purchase food; select and develop recipes; standardize production recipes and to ensure consistent quality according to standards of operation including Interstate Hotels operating procedures. Establish presentation technique and quality standards; plan and price menus; ensure proper equipment operation/ maintenance and ensure proper safety and sanitation in the kitchen.
