Sodexo is seeking an experienced Chef Manager for the production kitchen at Gonzaga University -- a faith based college account with Residential Dining, Food Retail concepts and large and high profile Catering services. The Culinary team consists of Executive Chef for the campus, Executive Chef for Resident Dining and a Catering Chef, in addition to this Chef Manager role and oversees $7.6M annual volume in Resident dining averaging 3200 meals a day and a Catering Manager responsible for $2.8M annual volume catering services in the new Hemmingson Center and conference center and summer conferences.
The Food Production Manager at this facility will be involved with and responsible to manage the daily operations of the production kitchen managing base production for the entire campus, will implement production processes, coordinate with Resident Dining and Catering Executive Chefs, properly manage food and labor costs and have a thorough working understanding of HACCP, all to exceed customer and client expectations. This position will oversee staff of 8 - 15 employees and will report directly to the Executive Chef for the campus. PROJECTED SCHEDULE for this position is Thursday - Monday Noon - 10pm.

excellent leadership and communication skills,
skills to develop and implement daily production schedules and have the ability to handle multiple priorities .
The ability to build teamwork is a must.
Previous or current Sodexo kitchen management experience or in other high volume environments: college, hospital or corporate business segments, banquet/hotel. Strong "culinary chops" and ability to ensure high volume, high quality food production, presentation. solid understanding of production systems: Food Mgt, Labor Mgt, The Market Connection as well as HAACP food and physical safety. The ability to provide strong kitchen management; hire, train and mentor a diverse kitchen staff. Strong sous chef or production manager background -- for this high profile next level role.

Position Summary
Supervises cooks and oversees the preparation, portioning, garnishing, and storage of food. Estimates food consumption and purchases food. May assist in cooking and preparing food as necessary. Responsible for maintaining kitchen and storage facilities in sanitary condition. Responsible for cash management. Interacts with client/customers on a regular basis. This position is the leader for an account/unit chef/production group. This position is in smaller accounts/units where there is not a Executive Chef or Food Production Manager. Reports to General Manager.
Qualifications & Requirements
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 1 year
Basic Functional Experience - 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
Sodexo will require a background check and may require a drug screen for this position.
