The Bristol Executive Chef is responsible for overseeing all aspects of the restaurant kitchen, encompassing operational duties and financial responsibilities, providing leadership and management of the Bristol Kitchen staff, and growing and developing the product and profitability of the Bristol food items.
The essential functions of the position include, but are not limited to, the following:
Profit:
* Control labor and operating expenses through effective planning, budgeting, purchasing decisions, and inventory control while focusing on creative cost control and revenue generation solutions to maximize profit
* Create, implement, and meet the financial expectations of an annual independent budget along with a monthly profit and loss account for the operation
Product:
* Effectively plan and develop menus for the restaurant considering factors such as product availability, food and service cost, marketing conditions and business volume; assign prices for daily menus that result in net profit; participate in making decisions regarding printing, layout, posting, and distribution of menus while ensuring the correct preparation and presentation of a consistent level for all food items prepared through product and demonstration.
* Ensure that sanitation standards as set forth by local, state & federal Health Department regulations are in compliance as well as the cleanliness and organization of the kitchen
* Set up control systems which will assure quality and portion consistency and the ability to create proper purchasing specifications as well as monitor and review operating criteria and develop an awareness of the importance of food preparation and quality
* Ensure exceptional quality of all ingredients, preparation, and plating of food and beverage items
People:
* Coordinate the selection, training, coaching, development, motivation, and evaluation of employees, and managers to ensure exceptional service for our guests
* Provide counseling, progressive discipline, including termination, of underperforming staff in the Bristol
* Be visible in the Bristol, providing recognition to guests and staff, promoting positive public relations, handle complaints, concerns, and special requests
Must Have:
* Three years prior kitchen management experience in full service restaurant, proven experience managing a team in excess of twenty people, comprehensive understanding of Kitchen finances and proficiency in Massachusetts labor laws
