Dallas/Fort Worth - TEXAS - Excellent Remuneration

For 16 years, Main Street Bread Commissary is a successful and continuously growing production bakery with numerous international and domestic wholesale accounts. We are perfectly located in the North Texas dynamic and friendly suburb of Grapevine, TX.
Within 10mn driving distance of the 9th world's busiest airports, we developed through the years a strong partnership with Airlines and provide them daily high-quality products for First Class & Business. Our Pastry Chef will supervise and coordinate the production of desserts, confections, ice creams and fancy pastries. Pastry chef will be willing and able to actively manage pastry staff through leadership and motivational skills (including hiring, training, coaching & counseling).
SKILLS:
* Knowledge of variety of desserts especially French pastries;
* Knowledge of custards, cookies, mousse, sponges, meringues and icings;
* Knowledge of mixing methods; creaming, whipping, folding;
* Knowledge of finishing methods and techniques;
* Ability to understand Food Cost and Labor Cost;
* Able to maintain constant quality with high volume expectations;
* Comprehension of regulations regarding the handling of food and public safety.

REQUIREMENT:
* Minimum 10 years work experience including 4 years of management
* Allowed to work in the USA
* Driver's License
