Sodexo is seeking an Executive Chef (I) for the Masonic Care Community of Utica, New York . This is a 500 Resident Premiere Retirement Community with senior living options including independent living, home care, adult residential care, rehabilitation and long term care. Position is responsible for dining services at Acacia Village, the 160 Resident Independent Living facility on campus.
Position is responsible for creating amazing daily dining experiences for the Residents, overseeing food production, menu planning, inventory and on-line ordering, training and mentoring, food safety and sanitation, food and labor costs controls, catering and employee meals. Position visits with the Residents during meal service and is actively engaged in community activities while overseeing catered events. This is a customer service driven environment for a dynamic individual with a passion for people and attention to details that distinguish high service level standards second to none in the industry. Position reports to the General Manager and will be part of the Sodexo Culinary network.
Ideal Candidate Skills / Certification:
Culinary Degree / Trade School Certificate, Servsafe Certificate
Healthcare experience; knowledge of modified diets
Detailed knowledge of HACCP and Department of Health Regulations
HR skills to train & develop 25 employees; culinary & food production
Menu Planning for resident dining, employee cafeteria, coffee shop, and catering
Food production, quality standards, and upscale catering experience
P&L management of 500K in financial volume
Computer skills; Financial, Food, & Labor Management Systems and Menu Graphics
Five Star Dining experience, customer service, and customer relations
The schedule will vary between 9 am -6 pm and 10 am -7 pm with shared weekends / holidays

Position Summary
Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a small account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
Qualifications & Requirements
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 1 year
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
