Job Title: Executive Pastry Chef
Reports To: Owners
Purpose of Job:
The Pastry Chef of Café Fiero will be responsible for creatively overseeing all baked goods production while utilizing seasonal fruits provided by our Produce Buyer from local markets, producing custom tailored quality desserts to three restaurants and two cafes in collaboration with the Executive Chefs, and will assist in having all foods ready and loaded for delivery on time.
Essential Job Functions:
- Produce desserts for multiple locations to be served 7 days per week in accordance with restaurant logistics and plating requirements.
- Produce breakfast pastries and some breads for multiple locations 7 days a week.
- Working with the logistics of each restaurant location as related to storage and plating as to the types of desserts that can be offered.
- Demonstrates the plating procedure and set up of new menu items to the staff.
- Inventory product on hand and adjust prep amounts according to established par levels.
- Control food costs by maintaining accurate records of all ingredients.
- Ensure that all recipes are costed out and recorded.
- Reports equipment and food quality issues to the owners.
- Interview and hire staff in accordance with “HR Best Practices”.
- Supervise and train employees as needed.
- Complete additional responsibilities as assigned.
- Must be able to work nights and weekends if necessary.
Qualifications/Requirements:
Education:
Bachelor’s Degree preferred, or 3 years of experience as a Pastry Chef or any combination thereof.
Experience/Skills:
- Some experience in a supervisory or management capacity with a minimum of one employee working under you.
- Demonstrated ability to work and communicate professionally, verbally, and in written form with internal and external customers.
- Demonstrated customer service excellence.
- Microsoft Suite of products including Excel, Outlook, and Word.
- Building management and hospitality/restaurant maintenance operations.
- Maintenance management software.
- Keeping abreast of current technology related to facility management.
- Be able to read and understand recipes.
- Must have or be able to attain a ServSafe Certificate as required by the county of San Luis Obispo.
- Must be able to take direction and be self-sufficient.
- Must be driven and take initiative.
- Must have high level of integrity.
- Must be able to work well with a team.
- Passion for food & culinary excellence.
