**A DAY IN THE LIFE OF A HOTEL SOUS CHEF**

Direct subordinate to the Executive Chef and/or Food and Beverage Director and second in command of all back of the house operations. This position is vital to the proper running of the kitchen and key responsibilities including: Ensuring quality and consistency of all food and oversight of all kitchen personnel.

Role Accountabilities & Expectations:

* Acting culinary leader by developing and assuming key management responsibilities.

* Assume the role of liaison between all dining room operations and culinary staff.

* Monitor food production, ordering, costing and quality consistency on a daily basis.

* Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring.

* Manage other key culinary leadership rolls including less senior Sous Chefs.

* Lead and coach the team towards achieving exceptional guest service and employee satisfaction results.

* Supervise the preparation and cooking of various food items.

* Participate in marketing events directly related to their specific restaurant.

* Estimates food consumption and purchases or requisitions foodstuffs and kitchen supplies.

* Reviews menus, analyzes recipes, determines food, labor and overhead costs and assigns prices to menu items.

* Directs food apportionment policy to control costs.

* Supervises cooking and other kitchen personnel and coordinates their assignments to ensure economical and timely food production.

* Observes methods of food preparation and cooking, sizes of portions and garnishing of foods to ensure food is prepared in prescribed manner.

* Tests cooked foods by tasting and smelling them.

* Devises special dishes and develops recipes.

* Familiarizes newly hired Chefs and Cooks with practices of kitchen and oversees training of Cook Apprentices.

* Establishes and enforces nutrition and sanitation standards for restaurant.

* Other duties as assigned.

**QUALIFICATIONS FOR A SOUS CHEF**

* High school degree or GED preferred.

* Culinary degree or equivalent preferred.

* Two (2) to four (4) years of culinary experience.

* Ability to work nights and weekends.

* Ability to speak, read and write English.

* Must pass and remain in compliance with drug free workplace policies.

**PHYSICAL REQUIREMENTS (as required by OSHA and ADA)**

* Ability to work weekends, holidays and evening hours as business demands.

* Must be able to spend 100% of working time standing, walking and reaching.

* Pushing, pulling and lifting objects from a lower to higher position or moving objects horizontally, from position to position.

* Maintaining body equilibrium to prevent falling while walking, standing or crouching in narrow, slippery or erratically moving surfaces.

* Climbing and ascending or descending ladders, stairs and ramps.

* Must be able to carry loads greater than 35 pounds and exert up to 50 pounds of force occasionally, and/or up to 30 pounds of force frequently.

* Hearing sounds at normal speaking levels with or without correction.

* Specific vision abilities include close, distance, color, peripheral, depth perception and the ability to adjust focus.
