Description

Great Circle Catering is the Seacoast area's premier full-service caterer for personal and corporate events including weddings, summer BBQ and holiday parties, in-flight meals, and more. GCC has many off-site locations as well which include the Airside Caf and The Daily Press located in the Pease Tradeport.

Position Scope:

The full-time Kitchen Manager will oversee the commissary kitchen of Great Circle Catering, leading by example to improve and implement procedures and best practices. As a leader in the kitchen, you will embody a unique mix of culinary experience, management of a diverse group of employees, financial acumen, and an unwavering commitment to the principles of hospitality.

Duties and Responsibilities:
  • Place orders with purveyors for food and non-food items
  • Receive orders and maintain a FIFO system
  • Maintain organized food storage areas and utilize space accordingly
  • Conduct monthly inventory
  • Collaborate on menus
  • Create and update recipes
  • Implement pull/prep sheets
  • Establish and oversee daily, weekly, monthly kitchen cleaning schedule
  • Maintain safety and cleanliness standards
  • Supervise all prep and production, providing quality control for all food leaving the GCC kitchen for orders and events
  • Create weekly schedule for kitchen staff
  • Assist in hiring kitchen staff
  • Oversee training of all kitchen personnel
  • Assist in completing employee reviews in a timely manner
  • Work to reduce waste, COGS and Labor costs
  • Communicate in a professional and respectful manner with all employees, vendors, clients and visitors
  • Remain flexible and fluid through changing and challenging situations

Required Skills/Abilities:
  • Culinary degree or certificate from an accredited program (preferred)
  • Verifiable career path of 3-5 years of culinary leadership
  • High volume catering experience
  • Serve Safe Manager Certification or able to obtain upon hire
  • Microsoft Office Proficiency
  • Experience with Inventory Management software
  • Ability to work a flexible schedule
  • Must pass a drug screen and background check

Physical Requirements:
  • Ability to lift 50+ lbs
  • Ability to stand for long periods of time
