Duties and Responsibilities:

Under general direction of the Assistant Director of Dietetics and the Food Manager, the Food Service Supervisor II directs, coordinates, and standardizes the serving of food in the Main Dining Room, supervises and instructs employees in the service of food, develops, reviews, and revises policies and procedures regarding meal service.

Direct and coordinate responsibilities for the Food Service Supervisor I, Food Service Technician II's and Food Service Technician I's. Participate in employee job hiring interviews and serve on QAP's (Qualifications Appraisal Panel). Assign work to food service personnel, supervise their activities, review, and evaluate their performance and recommend appropriate action. Conduct progressive discipline and document work performance as required following effective personnel management practices. Evaluate and prepare probationary and annual evaluation reports with input from lead staff. Maintain timekeeping for all food service staff in the Main Dining Room. Responsible for the fair approval and disapproval of vacations based on policy and other leave requests within authority limits.

Complete food, meal, dessert, and bread requisitions for four weeks in advance for distribution to the Supervising Cook II or I, and Warehouse. Log the food usage and adjust counts to accurately reflect usage.

Maintain master staffing schedule for Main Dining Room and coordinate overall employee work schedules to ensure balanced staffing for a.m. and p.m. shift as well as acceptable coverage during staff shortages. Review station assignments prepared by Food Service Supervisor I/Food Service Technician II's to ensure all stations are appropriately staffed. Move staff from stations as necessary for the completion of work duties during shortages and follow contingency plan. Identify training needs of staff and coordinate a monthly training program with Assistant Director and Director of Dietetics. Develop training materials, recommend the purchase of training supplies, and conduct in-service training for food service personnel and record training. Ensure that Safety Training and RAR training is completed on a monthly basis. Conduct monthly staff meetings for Food Service personnel and ensure meeting minutes are prepared and dispersed. Attend other meetings and training classes as required and assigned. Develop and compile materials needed for area's safety program. Assist in enforcing safety rules. Prepare injury and incident reports after thorough investigation and gathering of facts. Maintain records. Assist in reviewing updating and enforcing department policies and procedures governing Dietary and Food Service.

Supervise the preparation for meal service, arrangement of tray assembly line, dining, presentation, portion control, and proper serving temperatures following Hazard Analysis and Critical Points (HACCP) principles. Insure that the staff receives a briefing at the beginning of the meal so they are clear on product served and portion control. Oversee the operational performance and general conditions of cafeteria, dining room arrangement, and serving areas, standards in ware-washing area equipment, and utensils. Prepare work orders as required and review with supervisor. Inventory service equipment in Main Dining Room. Develop plans in assessing future needs for additional and replacement equipment. Purchase non-feeding supplies for Main Dining Room and facility areas. Assist in writing specifications for equipment and supplies

Attend and respond to veterans at the monthly Food Advisory Meeting. Check food quality by various sensory methods including temperature, sight, and taste. Coordinate with production supervisors for problems pertaining to food shortages, quality, temperatures, etc. Conduct a daily tour of cafeteria and dining room facilities to observe and enforce compliance with sanitation and safety regulations and observe employee efficiency. Observe conditions during operations to insure safe traffic flow and appropriate behavior in the Dining Room. Prepare reports of findings and follow up with plan of correction. Insure maximum service to the client population within the scope of allotted personnel and budget allocation. Observe and report client satisfaction and /or complaints toward the food served and communicate to appropriate staff. Maintain a food acceptance and wastage record. Develop quality assurance monitors and other plans of correction to resolve problems. Inform the Food Manager of any situation, activity or change requiring special attention.

Oversee catering functions for the department. Monitor nourishments program out of Main Dining Room and coordinate with Assistant Director of Dietetics. Participate in the department's Quality Assurance program, and Employee Recognition Program

Attend in-service training classes and regular monthly staff meetings, assist co-workers with any special clean up or extra jobs as related

Other related duties as assigned.
