Duties and Responsibilities:

Under general direction of the Assistant Director of Dietetics and the Food Manager, the Supervising Cook II is to plan, organize, supervise, and assist with the preparation, cooking, and serving of food to residents, guests and employees, judge food quality, requisition, receive, inspect, store and inventory supplies, make inspections and maintain safe food handling practices and sanitation standards, supervise and assist in the maintenance of culinary equipment, supplies, and work areas, and to do other related work.

In direct charge of the cooks and the food production staff in the preparation, cooking and serving of three meals per day, assign work, supervise, and give instruction and training to employees, volunteers, and helpers from the resident population. Evaluate their performance and take or recommend appropriate action. Prepare, cook and dispense food and may serve as lead cook on a shift, apportion the food to various serving areas including the main dining room and tray-line serving area, supervise the preparation of special diets, adjust recipes, determine food quantities necessary for groups of varying size, supervise the maintenance of culinary utensils and equipment and the cleaning of various storage and work areas, make inspections and maintain food handling practices and standards of safety and sanitation, supervise garbage disposal.

Requisition, receive, inspect, store and inventory supplies, as required, plan menus in accordance with the established food allowance and determine the amount of food to be prepared, as required, act for the Food Manager in his/her absence, perform catering or special functions.

Schedule and attend group meetings, receive instruction from the Food Manager or Assistant Director of Dietetics. Attend required in-service training. Keep records and prepare reports.

Other related duties as required.
