OAK Long Bar Kitchen Overview: Join our highly talented team of professionals who are dedicated to delivering exceptional service and cuisine. Located on the cornerstone of Copley Square in The Fairmont Copley Plaza hotel, OAK offers a vibrant, social atmosphere in a setting that evokes the youthful energy of Boston while marrying the historic with the new.

Summary of Responsibilities:

Reporting to the General Manager, OAK Long Bar Kitchen, responsibilities and essential job functions include but are not limited to the following:

Consistently offers professional, engaging and friendly service

Maintain regular attendance in compliance with Fairmont Standards, as required by scheduling which will vary according to the needs of the hotel.

Maintain high standards of personal appearance and grooming, which include wearing the proper uniform while working.

Comply at all times with Fairmont standards and regulations to encourage safe and efficient hotel operations.

Develop proper training and direction of departmental colleagues who operate in compliance with company standards of quality, specification, portion control, recipes, employee relations, sanitation, etc., as outlined by company policy.

Understand daily forecasts and customer counts

Coordinate with chef's all par stock levels

Assess food portion size, visual appeal, taste, and temperature of items served.

Observe company standards throughout the kitchen.

Direct and train all chefs to ensure adequate operation in all outlets.

Create menus

Review and approve weekly pay roll.

Supervise all Colleagues in all phases of the food production function for all

OAK Long Bar Kitchen and In Room Dining.

Oversee daily activities such as preparation for all food items, sanitation of the outlets, receiving daily inventories, log on report, and food cost report.

Oversee entire OAK Culinary staff

Attend F&B meetings and staff meetings.

Communicate to engineering any physical maintenance problems.

Other duties as required

Qualifications:

Previous leadership experience in the Culinary field required

Journeyman's papers or international equivalent preferred

DiplomaCertification in a Culinary discipline preferred

Computer literate in Microsoft Window applications an asset

Strong interpersonal and problem solving abilities

Highly responsible & reliable

Ability to work well under pressure in a fast paced environment

Ability to work cohesively as part of a team

Ability to focus attention on guest needs, remaining calm and courteous at all times

Ability to exert up to 50 pounds of force occasionally, and/or 20 pounds of force constantly to lift, carry, push, pull, or otherwise move objects

Long hours sometimes may be required
