BASIC PURPOSE: Prepare cold food items in accordance with production requirements while maintaining all food preparation standards in a safe, accident-free environment.

ESSENTIAL FUNCTIONS:

1.   Prepare all food items according to menu description and correct handling procedures.  Maintain highest quality and appearance of all foods sent from kitchen and make sure plates are clean and appetizing.  (60%)

2.   Maintain proper pars of production levels according to estimates on the production sheets; maintain top quality freshness.  (10%)

3.   Use leftovers.  Label and date all food.  (10%)

4.   Maintain clean and orderly refrigerators and work areas.  Make sure that all stations are properly cleaned at end of shift and at end of evening.  (10%)

5.   Rotate all foods and correctly fill out production charts.  (10%)

Knowledge and Skills:

Education:

High school education or equivalent experience.  Two-year culinary degree or equivalent.

Experience:

Minimum two years food service or related work. Fine dining experience is preferred.

Skills and Abilities:

Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, and flat top grill.

Hours Required:

Forty hours over a five day period; scheduled days and times may vary based on need.
