This 250 seat base mountain restaurant is located next to the Arrowhead ski lift. The Executive Chef will manage all aspects of the kitchen under the supervision of the General Manager, and will assure assure maximum guest satisfaction through the smooth and efficient operation of the kitchen and associated duties. The duties include, but are not limited to:

  • Prepare, produce, and present outstanding scratchmade quality cuisine in a timely manner through effective management of staff and kitchen operations
  • Partner with general Manager to manage all aspects of Food & Beverage for day to day operations, special events & Summer Events
  • Develop, manage and communicate all menus to staff, other pertinent departments and marketing/advertising staff. Ensure maximum guest satisfaction in food quality and expedite special requests
  • Coordinate ordering and availability of product, supplies and equipment with warehouse clerk, sous chef, supervisors and managers utilizing Vail Resorts preferred vendors for the maintenance of budgeted cost of sales guidelines
  • Perform daily and monthly inventory of all product with a concentration on food
  • Perform costing and control for all menu items
  • Ensure kitchen safety and sanitation through supervision of food preparation/production, proper condition/cleanliness of kitchen equipment, use of cleaning chemicals and maintenance of Haz Mat MSDS book
  • Achieve and maintain proper and budgeted staffing levels through effective hiring and scheduling of staff.  Establish and maintain a successful and positive working environment through proper training, discipline and support of all kitchen staff
  • Train, supervise and evaluate staff to ensure employee performance guidelines are met
  • Extensive and creative menu development while maintaining signature items
  • Lead by example; this position will require frequent training/cooking on the line with staff
  • Be open and responsive to guest menu requests and create a positive culture within the operation to embrace this philosophy
  • Be outgoing and willing to go in to the dining room to talk with members and guests and to make appearances at local food festivals and on TV8
  • Hiring, training, disciplining, and motivating all BOH staff
  • Creates new, innovative, and cost effective menus for each season and holidays, trains to these menus, recipes and standards, maintains consistency of product.
  • Responsible for scheduling, staffing, and controlling labor costs, while maintaining the level of experience our guests expect.
  • Create a positive, team atmosphere with emphasis on teaching, instructing, and educating new culinary employees while maintaining a level of experience our guests expect.
  • Fiscal responsibility - inventory, costs, labor, budgeting, analysis, forecasting, savings plans, etc.
  • Responsible for training to and upholding health department guidelines and safety standards.
  • In addition to the above summary, the Executive Chef is expected to follow all direction from upper management as directed

Qualifications:

  • 5 or more years of culinary experience - required
  • 5 or more years supervising large staff - required
  • Valid driver's license - required
  • Proficient in MS Office - required
  • Willing and available to work weekends, holidays and evenings as needed - required
  • Friendly and professional demeanor with guests both internal and external - required
  • Culinary degree - preferred
  • High volume dining and event experience - preferred
  • Past use of computerized purchasing system - preferred
