Sodexo Universities Dining has an opportunity for a Chef Manager  for Minnesota State University-Mankato located in Mankato, MN. With a student enrollment of over 15,000, this 350-acre campus overlooks the Minnesota River Valley and the busy streets of Mankato. Reporting to the General Manager, the Chef Manager  will work closely with the Executive Chef and team in transitioning into a new $32 million   opening in January, 2017! This position will work along side 4 salaried managers and 7 supervisors and approximately 150 hourly employees in a large resident dining facility serving approximately 2,700 students 4,000 meals/day.  During summer, this campus is also home to the Minnesota Vikings Training Camp!

 

The ideal candidate will possess:

 

  • The ability to oversee the culinary planning and production of a board operation serving approximately 20,000 meals per week in a platform dining setting.
  • A good understanding of financials as they apply to food and labor costs.
  • Willingness to mentor approximately 150 frontline FT and PT employees.

Position Summary

Supervises cooks and oversees the preparation, portioning, garnishing, and storage of food. Estimates food consumption and purchases food. May assist in cooking and preparing food as necessary. Responsible for maintaining kitchen and storage facilities in sanitary condition. Responsible for cash management. Interacts with client/customers on a regular basis. This position is the leader for an account/unit chef/production group. This position is in smaller accounts/units where there is not a Executive Chef or Food Production Manager. Reports to General Manager.

 

Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree Basic Management Experience - 1 year Basic Functional Experience - 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.Sodexo is an EEO/AA/Minority/Female/Disability/Veteran employer.
