Unit Description

The State University of New York at New Paltz, known as SUNY New Paltz for short, is a large public college in New Paltz, New York. It traces its origins to the New Paltz Classical School, a secondary institution founded in 1828 and reorganized as an academy in 1833. The college is one of only four SUNY institutions in the New York metropolitan area.

 

Sodexo Dining Services on the campus of SUNY New Paltz is seeking an Executive Chef for the Hasbrouck Dining Hall location.  Hasbrouck is located in the heart of campus near the majority of all the residence halls. This is an extremely busy, fast paced location.  The Executive Chef works closely with the Resident Dining Manager, Campus Executive Chef, and the General Manager on campus to ensure culinary service excellence.  Position has oversight for a culinary staff of over 20 (including part-time students and full-time employees) and annual sales around $8M.

 

The best qualified candidate will have the following:

 

- College/University culinary Resident Dining Management experience

- Experience training and leading a kitchen staff (union experience helpful)

- Experience with purchasing, food/labor costs and managing budgets

- Experience with food and physical safety programs

- Experience with service standards and customer satisfaction

 

Typical work schedule will be Tuesday through Saturday from 9am-6pm or 10am -7pm with the need to be flexible depending on business needs.

Position Summary

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.

 

Qualifications & Requirements
