This position runs a small resident dinning program on campus with a Starbucks, Simply to Go Concept, and some on-site catering.

In this role, you will oversee food production and service, manage the food and kitchen safety programs, coordinate catered events, conduct inventory and on-line purchasing, control food & labor costs, manage P&L reports for one million in sales, hire, schedule, and train employees on culinary techniques that will produce remarkable dining experiences, visit with customers during meal service and look for service improvement opportunities.A This is a customer service driven environment for a dynamic individual with a passion for food and people and boundless energy for details that distinguish high service level standards that exceed Client expectations..A

A

Do you have the following background and competencies?A

Culinary Degree / Trade School Certificate and Servsafe Certified

Campus Dining, Contract Food Service Management experience

Working knowledge of HACCP protocols for regulatory compliance

Food production, meal presentation, catering with attention to detail

Experience; inventory management & on-line ordering for 1M in volume

Skilled at creating and developing menus and pricing

Capable of training & developing 2 supervisors and 20 employees

Ability to manage multiple and at times, competing priorities

Computer skills; financial, food & labor management systems, Menu Graphics

Organize team members in food and kitchen safety with regular self-audits

The final candidate selection process will involve a hands on Chef Test

Typical Schedule; 7am-5pm with monitors in place for this 7 day operation

Position Summary

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a small account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.

Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 1 year
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
