Job Description
ROLE: FULL TIME FOOD SERVICE WORKER/SUPERVISOR IN A INSITUTIONAL SETTING
MILITARY COOKING CULINARY SPECIALIST EXPEREINCE PREFERRED
PRIMARY ROLE & RESPONSIBILITY:
· Supervises inmates engaged in the preparation and assembly of food as well as inmates performing sanitation and utility functions.
· Conducts bi-weekly and monthly inventory.
· Conducts daily HAACP checks and conducts weekly food and chemical orders.
KEY PERFORMANCE AREAS:
· Supervises employees in the food preparation and tray assembly. Ensures OP-X guidelines are being met. Ensures proper portion and any special dietary requirements are fulfilled, Ensure timely and efficient meal service.
· Assigns and coordinates work of inmates to promote efficiency of operations.
· Trains inmates in methods of performing duties.
· Obtains accurate population counts.
· Maintains security. Ensures that all kitchen tools and equipment are returned to secure area. Ensures all keys are also returned.
· Develops sanitation schedule and ensures inmates adhere to the schedule.
· Oversees cleaning of kitchen and tray assembly area. In addition, oversees washing of kitchen utensils and equipment according to sanitary methods.
· Keep records, such as amount, and cost of meals served, and hours worked by employees.
· Requisitions supplies and equipment to maintain stock levels. Monitors stock levels. Reports any discrepancies in stock levels to Food Service Director.
· Participates in the preparation/5 P’s (Participation, Pulls, Production, Portion Control and Postproduction), storage and assembly of meals and food items.
· Follows company’s Standard of Operation for food handling and storage.
· Determines work procedures, prepares work schedules and expedites workflow.
· Performs other duties as assigned by Food Service Director.
CRITICAL SKILLS PROFILE:
· Good communication (both verbal and written) as well as interpersonal skills required.
· Some mathematical ability is required to calculate food costs and food supplies.
· Previous Personal Computer skills are a plus.
· Must be able to lift up to 50lbs.
EDUCATION & EXPERIENCE:
· High School diploma or equivalent.
· Must Pass Criminal Background Check
· One to three years Stable work experience in institutional food service or food production job.
· Previous experience Institutional experience required.
· Must have or be able to obtain city, county, or state Food Handlers Management Certification.
