Food Service Team Leader’s Mission

Oversee the operations of the kitchen and be accountable for maintaining the Prasek’s standards of quality, service and cleanliness in order to ensure complete customer satisfaction.

Essential Functions

- Build relationships with customers and along with Team Players, provide superior customer service

- Demonstrate a sincere concern and sense of urgency to remedy any problem a customer may have and notify the Food Service Manager/Executive Chef if needed

- Handle customer conflicts in a polite and respectful manner if the Food Service Manager/Executive Chef is unavailable.

- Train Team Players, as directed by the Food Service Manager/Executive Chef, on how to meet operating standards

- Supervise and train all Team Players to prepare all food items according to the Prasek’s recipes and quality standards

- Assist the Food Service Manager/Executive Chef with scheduling an adequate number of Team Players on the job every day

- Ensure all kitchen standards of Prasek’s are maintained for food quality and production

- Promote product sales by providing customers with information needed to make purchases

- Train Team Players to operate all food production equipment used in the kitchen according to proper procedures

- Make sure the kitchen facility and equipment are maintained in good and acceptable operating condition

- Ensure all food items are properly prepped and cooked according to the recipes and quality standards of Prasek’s Hillje Smokehouse (appearance, temperature, consistency, portioning)

- Schedule adequate food production to meet customer demand

- Maintain adequate inventory of raw ingredients in storage at all times

- Properly check-in products to ensure they meet Prasek’s standards of quality and freshness

- Receive product from vendors and direct team members to store in proper areas.

- Follow and enforce guidelines as per Standard of Operations manual and Recipe manual

- Prepare quality food and assemble orders as requested by customers

- Prepare quality dishes from extra food from lunch specials or events

- Follow all guidelines, such as first in first out for storing and rotating products. First in/ First out

- Maintain cleanliness and sanitation in all areas of the kitchen

- Assist in achieving gross profit margins by controlling inventory, inspecting product delivery and quality, ensuring accuracy of orders and purchase invoices, managing shrink, supplies used, and labor cost

- Achieve sales goals by analyzing product sales, monitor menu effectiveness, regularly proposing new menu items, rotating products, effectively merchandising self-serve displays and communicate this information and these strategies to Team Players daily daily.

- Perform all duties of the kitchen on a regularly scheduled basis and in times of need

- Ensure all required Team Player certifications are met and current

- Effectively communicate with all departments on a regular basis

Education, Knowledge and Experience

- Several years of successful cooking experience and some degree of managerial experience

- General knowledge and understanding of nutrition

- Knowledge of restaurant operations and food service programs

- Maintain food-handler’s certification

- Basic knowledge of Microsoft Office and technologically based equipment

- Understand and be able to use all required machinery

- Knowledge of product quality, safety, fabrication, merchandising and marketing, processing and processes, selling, use, and cooking techniques

Physical and Other Requirements

- Must be 18 years of age or older

- Must be able to lift and carry 60 pounds

- Must be able to stand, walk, bend, reach, kneel, squat, reach overhead and side-to-side for an extended period of time

- Must be able to move safely around equipment and possess dexterity in hands and fingers

- As dictated by business and need, must be able to work extended hours and a varying work schedule
