1. Salt Wash-Off Process

  • Check the wash-off board to identify wash-off times, ensuring fish is washed off at or immediately after the designated time to meet curing requirements.
     
  • Verify ozone levels at the wash-off hose during pre-operation, hourly, and post-operation checks.
     
  • Remove the first rack at the correct time and place it into the wash-off bay.
     
  • Carefully wash each tray, starting from the top, ensuring all salt is thoroughly removed.
     
  • Once all trays are washed, transfer the rack to the pre-smoke chiller, organizing racks neatly and keeping the chiller door closed when not in use.
     
  • Complete all required documentation to record wash-off times and maintain compliance with food safety standards.
     
  • Continue process for subsequent racks, ensuring correct order and timing as per salting documentation.

2. Smoking Process

  • During downtime, review the smoking plan for upcoming batches, smoke types, and scheduled times.
     
  • Locate and prepare the correct product batches in the Medium Care pre-smoke chiller and load them into the smoker.
     
  • Set smoker programs as per batch requirements and ensure the temperature chart is in place.
     
  • Complete all relevant paperwork in line with food safety procedures.
     
  • Monitor the smoker and smoke box hourly throughout the process.
Requirements:

 

Education & Experience:

  • High school diploma or equivalent required.
     
  • Prior experience in food production or processing environment preferred.
     
  • Understanding of food safety standards (HACCP, CCP, GMP) is an asset.
     

Skills & Competencies:

  • Strong attention to detail and ability to follow strict timing schedules.
     
  • Basic understanding of food safety and quality control principles.
     
  • Ability to complete paperwork accurately and consistently.
     
  • Comfortable working in cold/chilled environments.
     
  • Basic math and reading skills for interpreting schedules, temperatures, and records.
     

Physical Requirements:

  • Must be able to lift up to 55 lbs.
     
  • Ability to stand for extended periods and perform repetitive tasks.
     
  • Ability to handle tools and equipment safely.
     
  • Tolerance for working in cold and damp environments.


Other: Must be able to commit to night shifts: 5pm-1:30AM
