Job Duties:

  1. Fryer Management:
    1. Conduct fryer safety procedures, including cold starting and filter maintenance.
    2. Set fryer temperatures (330°ree;F for chicken and fish, 350°ree;F for side fryers).
  2. Marination Process:
    1. Prepare marination by mixing marination mix, salt, water, and ice in designated tubs.
    2. Schedule draining and completion times for marination.
  3. Fryer Designation for Food Safety:
    1. Manage specific fryer duties, including load quantities, cook times, and stirring intervals.
  4. Filter Maintenance:
    1. Sift flour before and after every load of chicken and after every two tenders.
    2. Change filters every two loads for fryer and grease maintenance.
  5. Grease and Side Fryer Management:
    1. Change side fryers after lunch and dinner rushes.
  6. Product Marination:
    1. Marinate tenders, chicken, livers/gizzards, and fish following specific procedures.
  7. Batter Process:
    1. Prepare batter by adding batter mix and cold water to the batter pan.
    2. Monitor and change batter as needed.
