SUMMARYThe Utility 2 position is responsible for HEAVY DUTY, DEEP cleaning of the restaurant kitchen, banquet facilities and equipment. Duties include but are not limited to: cleaning floors, kitchen equipment such as fryers, ovens, clean and organize coolers, freezers, dishes, glasses, cups, small wares, flatware etc. Majority of work is performed overnight during graveyard shift.
ESSENTIAL JOB FUNCTIONS- Clean and provide general maintenance within the kitchen, coolers, freezers and storage areas.
- Organize, clean heavy equipment; fryers, steamers, utility carts, convection and kombi ovens, meat slicers, etc. Also required to deep clean floors, walls, and shelving units.
- Provide restaurant with sanitary operation of dish machine resulting in consistently clean and sanitary dishware, silverware, pot and pans, cooks utensils, etc.
- Know and use proper operation of dish machine and cleaning including temperatures and chemical levels.
- Using proper pre-soaking and three-sink cleaning procedures when necessary.
- Know and use proper storage locations for glassware, dish racks, glass racks, chemicals and cleaning agents for dish machine and floor.
- Maintain and clean dish machine/dish room and floor through out shift, and on a daily basis.
- Put away stock when necessary.
- Willingness to cross-train and provide support in related areas of operations.
- Work other tasks assigned by management.
- Must have excellent communication skills both verbal and written.
- Must be a team player with a positive attitude.
- Must be able to work independently.
- Must be highly organized and able to multi-task.
- Must be able to complete tasks and projects in a timely manner by prioritizing obligations and time.
- Must possess the ability to work with various personalities while maintaining impartiality.
- Team oriented and self -motivated mindset required.
- Must respond to supervisory guidance and assignments and accept constructive criticisms in order to learn and grow as a team member in the department.
- The needs for quickness and ease of adjustment to the work environment and flexibility to change are essential in this position.

EDUCATION AND EXPERIENCEMust be 18 years of age or older. Requires general kitchen knowledge with some mechanical aptitude.

TYPICAL PHYSICAL DEMANDS- May be required to lift up to 75 lbs.
- Must be able to stand and/or walk for entire shift.
- Must be able to reach, bend, stretch, kneel, crawl, lift and carry.
- Must be able to effectively handle stressful and compromising situations while remaining focused and professional.
- Must be able to deal with difficult people without losing perspective.
- Must be able to work productively under strict time restraints with variable deadlines.
- Must be willing and able to work in a crowded, loud, warm, humid and smoky environment.
- Work under constant surveillance.
- May be required to work in confined spaces at times.
- Must practice all safety policies, procedures and standards as set by OSHA and Health Dept.
- Must be able to work evenings, graveyard shifts, weekends, holidays etc.
- Native American and Tribal Preference will apply.
- Must be able to pass a background investigation and a drug screen as a condition of employment.
- Must be able to work flexible hours and to take on additional responsibilities when asked.
- Must adhere to company policies regarding strict confidentiality.
